I got some from my dad a few months ago, I think he got them from Stump Sound. They were pretty good, but the collector really took liberties with the minimum size.I think they're more expensive than usual this year because of all the rain and bed closings.

It means they're out presently, but they ususally get new batches in 3 times a week. Sign up for their mailing list, it's a big help especially if you like seafood.Price in-bulk can be a little negotiable, my buddies and I throw a big steam pot party once a year or so and they'll cut us a rate if we can give them a ballpark of what we'd need.Love these guys though!

my oyster guy dives for all of his. they are from deep, salty water and super clean. he's in Pender County. he meets me just around the corner from my house. not sure where he'd meet you, but if it's worth driving for some of the best oysters around, PM me and i will give you his number.

Joe Numbers sighting!^^ I like fried/grilled/stewed/etc oysters fine. Not as much as shrimp which is usually about the same price but I enjoy them. But no, I'm not a big fan of raw oysters.

After years of a Christmas Eve (sometimes NYE) tradition of roasting oysters, I've decided it's not worth it.The past 3 years I've gotten shitty oysters that are too small and bland taste. I've ordered them from SC, VA, and the Gulf... and was underwhelmed.Maybe the main reason was I went to my inlaws in Louisiana back in Christmas 2011... the first year they allowed oysters to be harvested due to the BP oil spill. They were the best oysters I've ever had. HUUUUGGGGGE and very tasty!I joked that BP needed to have more catastrophes.

I think the ones I get come from Snead's Ferry? I'll pick them up from Jacksonville usually, they're unwashed (car wash ftw) 40 or 50/bushel and they're the biggest fuckers I've ever seen. They're muddy and it's annoying but they're huge.

The R months rule generally only applies to wild oysters. From what I understand cultivated oysters are okay year round.

I think that toxins are more prevalent in water/beds in warmer months too... supposedly this doesn't apply to commercial farms b/c the farmers supposedly take safeguards against this, but I don't know how.Also, I think oysters harvested in summer months aren't as good because it's spawning time and they use their energy for that, so they're not as "fat" and "chewy".Thanks for all the info guys, keep it coming!

I'm no expert, but when i used to eat them a lot, oysters from different locations looked different and definitely tasted different. Some were longer, some were rounder, some had darker shells, some were saltier, etc.

^ This for wild oysters, though cultivated oysters are said to be safe year round.I also still pretty exclusively use Locals Seafood for oysters and a lot of my other seafood. A little more expensive usually, but it's as fresh as can be and supports local fishermen.

Grilled some with my Dad two weeks ago. He was excited to show off this cast iron pan with scalloped out spots in it that hold a half shell that he picked up somewhere. For whatever reason, the farmer's market he has gotten them at before had none that week, but he happened to find some at Lowes food. Good size and texture, really clean, but they were relatively tasteless. By the end we were putting breadcrumbs, Parmesan cheese, garlic butter and hot sauce on them and grilling it for just a couple minutes. [Edited on February 22, 2017 at 7:00 PM.
