Never had 12 year aged rum so I dunno. After 12 years the wood flavor overwhelms the flavor of whiskey, whether it would do the same to rum I don't know.

^^Bourbon and Scotch are very different in terms of peak age. Generally the best bourbon is around 4-6 years and peaks at 10-12. Scotch on the other hand usually peaks at 18-30 (due to new versus used barrels). Aging makes both of them smoother because the flavors tend to settle.

Whiskey (Bourbon or Scotch) tend to have less of the new barrel flavor as they age and more of the pure flavor of the whiskey. This is why older whiskeys are usually preferred because they've had to time to mature and settle the flavor of the barrel.

I have Macallan 12 and 15 year old scotch, and they both are so good and feel like you hit the bong when you take a shot. Highly recommend.

^The nicest bottle on my bar is Macallan Fine Oak 15. It's a very, very nice drink. I've had the opportunity to try Macallan 18 and, while only three years "older", was really in another class. Outstanding. At the same time, I was able to try some Pappy Van Winkle 20 year, which was simply amazing.

In short, OP, I disagree strenuously with your premise.

Macallan 12 is one of my favorite Scotches.

The oldest aged rum I've tried is Flor de Cana 7, which is an amazing rum. It makes me a little sad that there aren't more aged rums on the market

I enjoy a lot of oak flavor in a bourbon, so I'm a fan of some of the longer aged products. I recently picked up a box set of Jefferson experimental bourbons where they infused extra oak into the barrels using oak cubes and sections of used merlot barrels; I enjoyed it thoroughly.

^^I vaguely remember ordering it and I certainly don't remember consuming it. Whisky flights are a very very bad idea for deserts after lots of wine. Bad idea on my part. Whisky is way over priced at restaurants. I guess just like wine and beer...
