I cook steel-cut oats or oat bran in water, but add a dash of cream (if I have any) or evaporated milk before eating. Sometimes I add plain Greek yogurt or labneh. I want the creaminess but don't want it to be watery.

I also throw in a bunch of stuff to boost the nutritional content to make it a proper meal (pistachios, cashews, olive/coconut oil or butter, flax/chia seeds, banana, dates/honey, berries, flax/chia seeds).

Water, but I'm also more of a "fresh fruit and raisins and maybe orange juice" in my oatmeal kind of person rather than a "sweet/creamy oatmeal" kind of person.

I have done savory oatmeal because I don't usually like sweet meals but I still like oats. I like it, except it's also weird. When you're used to seeing a food eaten exclusively one way (oatmeal with fruit or sugary flavors) it's a little hard to wrap your mind around something entirely different.

Hot water. I've never had it with milk. I assume you still warm it up right?

I agree, at first the consistency was weird because I expected it to be sweet. After a couple times you get over that. I, too, prefer savory flavors over sweet, so I love it now.

That's all you need for the basics. I'll often sub half and half for milk (I don't often have milk but always h+h) and add walnuts/pecans/slivered almonds, and dried fruit if I have it.

Oatmeal is good. I prefer milk, but it can be OK with water if you supplement it. I like to stir in a tablespoon or more of peanut butter and liberal application of cinnamon.
