That's the dumbest definition of sandwich I've ever read.

Yes, a hotdog qualifies as a sandwich. So does a lobster roll, everything subway served when they used to do the V-cut of their bread, most meatball subs, etc.

is a burrito a type of "wrap" or is a burrito, and other similar foods, in a separate category?

while they are very similar in construct, presentation, and style - i can't exactly explain why, but I feel that tacos, burritos, and other similar foods are separate from wraps. but i could be persuaded otherwise

I'm inclined to say "no," but the sub sandwich analogy makes it difficult for me to maintain this position. So, yes.

Wait, though. Is a taco a sandwich? 'Cuz structurally it's very much like a hotdog, only the bread is crunchy. And how about a soft taco?

One could argue that the taco does not have two distinguishable "slices" of bread, but is just a uniform shell, I suppose.

There are actually rules on what is and is not a sandwich for purposes of taxation and other things. This has actually been debated heavily. Also, wraps, tacos, burritos, all have had to be determined to be a sandwich or not.

I'd say no. The pizza was pizza before it was folded, now it's just folded pizza. And a calzone is actually a pie.
