Sorry, I didn't realize something like an internet search could be so difficult for a college educated person.yes, store it in the fridge.

obviously that was my first stepbut, also obvious, were the conflicting views on how to store tahini

If you can't tell the difference in validity between askville.amazon.com and food.com then what makes you think you'll get a more reliable answer in chit chat?If the jar says refrigerate after opening, refrigerate it.If it doesn't say that, then don't worry about it.Wiki says refrigerate ithttp://en.wikipedia.org/wiki/Tahiniand the article cited says to refrigerate it, and the only reason not to is because some tahini's become too thick to spread when cold. And why on earth would anyone think:

refrigeration also causes moisture condensation. Tahini is too anhydrous to readily support mold growth, especially when the oil separates, as it does at room temperature. But when some condensation forms inside of the container and drips down onto the top surface of the contents, there's then both plenty of nutrients and moisture for some hibernating fungal spores to wake up and start doing their thing.I say keep it out of the fridge if you are worried about storing it for a long time, making sure any solids are fully covered by a layer of oil. if you don't like stirring it up, keep it in the fridge and it will solidify (and stay homogenous), but you'd better eat it up fairly quick. I've never refrigerated my tahini. I can't even imaging what stirring that shit would be like if it was chilled. Pantry should be fine as long as it's relatively cool and dark.

if you stir it very well and chill it immediately, it will stay homogenous, just like natural pb, and you don't need to stir.
