Anyone else into cheese making?I got some labneh hanging in my fridge right now - I'm working through the beginner recipes on http://biology.clc.uc.edu/Fankhauser/Cheese/yogurt_making/YOGURT2000.htm, So far so good. Yogurt is super easy to make, I don't think that Ill ever buy it again.Can't wait to be good enough to make blue cheeses. So any of you out there do this? Any tips? I was thinking of buying a nice stainless steel pot to replace my double boiler.

distract yourself with homemade ricotta in the meantime. you lazy fucks can do it in the microwave. it's not actually real ricotta, really the precursor to paneer or queso blanco, but it has the same texture and taste and you don't need 500 gallons of whey.http://www.seriouseats.com/2010/02/how-to-make-fresh-ricotta-fast-easy-homemade-cheese-the-food-lab.html

I've made mozzarella before, but it was just ok. I made it with 2% milk, though. I figure I need to do it again with whole milk like an OG.

yeah, this is an official no-bake august. having the oven set to 480° for a couple hours makes the AC start shooting ice crystals.
