I can't decide what to make today.

I like to make a good spread on Sunday with quiche or veggie egg scramble, turkey sausage or bacon, grits/pancakes/bagel/some kind of bready thing, and fruit salad or fruit and yogurt or something. Haven't done that in a good bit though. I should invite someone over for brunch.

It wasn't kimchi. Maybe some Thai version of it or something. It's in a small blue can like cat food comes in & it says "fermented lettuce" on it. There's also a picture of a pigeon. Idk what the differences are but it's not of Korean origin.

I made roasted yellow and sweet potato hash in the oven yesterday. Pan cooked two yellow potatoes and two sweet potatoes with half an onion in an olive oil coated pan until they were all soft. Added them to a casserole dish, cracked four eggs near each corner of the casserole dish and baked it for about 15 minutes. I added some cheese and some pre-cooked turkey sausage on top with about five minutes left of baking time. I ate half of it yesterday for breakfast and am having the left overs today and tomorrow for breakfast.

A recipe inspired by Skwinkle.
