Barnes and Noble's starbucks cafes are open til 11 iirc. I always found it odd, that one of Burlington's (where I'm from) only starbucks stayed open later than all the ones in Raleigh.

Dunkin' Donuts on Hillsborough is open pretty late, I think, and their coffee is quite good. Just don't expect a lot of different types of mochas/lattes/whatnot. There are only a couple IIRC.
