I'm graduating this semester and I'm thinking about pursuing a lateral entry teaching position, so I'd like to take a couple of education courses over this summer. Has anyone done something similar to this before who could tell me how it works?

why don't you just enroll in an actual lateral entry program

Mostly because I think you have to first secure a position and most counties (or at least the ones I plan to apply in) don't do hiring until summer sessions have already been in session for a while.

Do you even know which courses to enroll in?I'd contact one of the two people at the bottom of this page and go talk to them.http://ced.ncsu.edu/teachered/alternative_teaching.html

im pretty sure you can just get a pin and register for summer courses even though you just graduated. I took an econ class during the summer after I graduated/ before I came back for grad school in the fall.

State offers a "licensure only" program through the education office. I just finished and got my license last week. Also they work with the "Teach4NC" program. You don't have to have a job to do either program.
