i used itunes for a while and then got sick of it so i uninstalled it but itunes put all my songs into a folder system according to band name and album. can i undo this so that all my songs are just in one file?

Start -> Search -> Files -> Choose directory, search *.mp3 -> Cut & Paste

You can use media player and still have organized files.
