Anyone know where I can buy duck fat locally? Ive tried Fresh Market, the normal grocery stores, and the big Asian store on Buck Jones. Anyone have any other ideas?It is mainly a French thing by the way so any stores focusing on French cuisine would be helpful too. Thanks.

not that i'd dare make fries in such a way (or make fries), the easiest way to get duck fat would be, go buy a duck, cook it in such a way that the fat drains, and then use it.i know that when i helped mom make christmas duck that we had a fair bit of it set to the side.

southern season (locally) or dean & deluca (http://www.deandeluca.com)it'll be easier to get the fat from a food producer, as it will already be rendered.to DIY, :In a large pot, combine 2 cups (500 ml) water with cut up strips of duck fat from 3-4 ducks. Bring to gentle boil and allow to cook until water has evaporated leaving approximately 12 cups (3 L) of rendered fat. it'll take a while, it's messy, and it's expensive.good luck.

well i read about it in a cooking magazine and there is actually a restaurant in Maine that specializes in it as well. http://www.duckfat.com/ which gets awesome reviews for its fries.Plus duck fat is healthier than beef or pork fat and gives a more interesting taste. found it at whole foods today. thanks for the help. Fries turned out pretty well. They are slightly sweet it seemed like, but I liked them. Give em a try sometime.
