So, boy I like is invited over for dinner. I'm going to cook, but, need suggestions for easy things that suit the occasion. Last time I made spaghetti and garlic bread so that's out.

I'm not a great cook, so looking for suggestions!

Btw- he doesnt eat things like sausage etc (meats that are processed like that, dont know what the term is)

Half inch thick pork chops
marinated in a mix of 5:1 soy sauce:sugar + shitload of minced garlic and pinch of black pepper
Grilled til done
+
Grilled zucchini, squash, red onion, and bell pepper drizzled in olive oil and a pinch of salt and blackpepper.
+
Steamed rice

^broil it in the oven...just make sure you have the exhaust fan on...burnt soy sauce drippings will stink a place up.

Veal cutlets are very tasty. Don't be afraid! Veal sounds really fancy, but is very easy to make and cooks up in like 5 minutes. Of course, if either of you have a moral opposition to veal then don't worry about it. Here is a great recipe that is simple and I have used it myself with much success. Prosciutto is like Italian spiced ham, it's hard to come by here so you can leave it out, that's what I did.

1/4 pound thinly sliced prosciutto
Several sprigs fresh sage
1/4 cup extra-virgin olive oil, , 4 turns of the pan
4 tablespoons butter
1 cup white wine, eyeball it
1/2 lemon, juiced

Season veal scallops with salt and pepper. Layer 1/2 of the medallions with 1 thin slice ham, folded to fit medallion. The edges of the ham can peak out a bit. Place 1 whole sage leaf on top of ham, then place another veal medallion on top of sage leaf. Heat a large, heavy skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil and 1 tablespoon of butter and saute 1/2 of the veal 2 to 3 minutes on the first side, 1 to 2 minutes on the second side. Transfer to a warm platter, then repeat with remaining veal.

Transfer the last of the cooked meat to the warm platter and return pan to heat. Reduce heat to medium low. Add wine to veal pan and scrape up pan drippings with wine and add lemon juice and remaining 2 tablespoons butter to the pan. Pour pan juices over veal and serve. "


The sage leaf adds a great flavor. Don't forget to take it out before you eat though! This recipe is great over rice or pasta, or paired with any easy side dish like mashed potatoes.

Alot of people dont know this, but Exhaust fans are pretty useless unless you have the windows open to let the air circulate through the room/kitchen.

First, dont worry too much... (straight) men are NOT usually picky eaters...

I know I'll eat just about anything. Just make sure you cook enough of it


Try cooking (good fresh) chicken, with a variety of vegatables and cheese. Something simple and can be made in large amounts.

(Cheese is a great way to hide accidents in cooking, should you make one).

Title: Peppercorn Steaks


Ingredients:
1 TBSP whole black peppercorns, crushed
2 strip or top loin steaks (8 oz. each)
2 to 3 TBSP butter or margarine, melted
1 to 2 garlic cloves, minced
1 TBSP Worcestershire sauce
1/2 cup red wine or beef broth
1 tsp ground mustard
1/2 tsp sugar
2 tsp cornstarch
1 TBSP water


Directions:
Rub pepper over both sides of steaks. Refrigerate for 15 minutes. In an ungreased skillet over medium-high heat, brown steaks on both sides. Add butter and garlic; cook for 4-6 minutes, turning steaks once. Add Worcestershire sauce; cook 4-6 minutes longer, turning once, or until meat reaches desired doneness (for rare, a meat thermometer should read 140 degrees; medium, 160 degrees; well-done 170 degrees). Remove steaks and keep warm. Combine wine or broth, mustard and sugar; add to pan. Stir to loosen browned bits. Combine cornstarch and water until smooth; add to pan. Bring to boil; cook and stir for 2 minutes or until thickened. Serve with the steaks.

I like to serve this with creamy mashed potatoes (instead of milk, use whipping cream, butter, and salt/pepper/some other spice i can't remember off hand )and leave the skins on.

add a side of some green veggie...sauteed green beans, asparagus, salad, whatever.

Just go with a really large salad.

Get some boneless chicken and grill it.
Pick your favorite lettuce or his favorite lettuce (iceberg, romaine, baby field greens, etc)
Add whatever veggies you feel like adding
Bacon/Croutons
Dressing.

It's filling and it serves as a meal. Hardly any "cooking" involved. And healthy to boot.

i'd suggest that you stay away from pork chops if i were you, they're too easy to make leather tough

I'm the one who "hooked" yodasjammies (<3), and chicken cordon blu is SO easy. Take a chunck of swiss cheese about the size of your finger, and totally wrap it with a piece of deli ham so its as tight as it can get. Then pound chicken breasts as flat as you can get it, and wrap that around as tight as you can get, so they look like little footballs. Then flour, buttermilk, breadcrumb, buttermilk the seams and ends, breadcrumb it. Then you spray a little oil over the top, and let it bake until golden brown.

Cooking is the best date ever. It really isn't hard, and guys love it.

Oh and if you are gonna do salad, try something a little different:
like a baby spinach or mesculin green mix with sliced strawberries, roasted pecans (with the brown sugar and butter goodness), and a balsamic vinegarette. Could use a sprinkle of goat cheese or something on top too.

Its incredibly good and incredibly easy but not your run-of-the-mill salad.

Seriously, my fiancee and I have been together almost 6 years and it never gets old. Every Friday or Saturday we pick out some kick-ass meal to try and open a bottle of wine or two. Good times.

great side dish:

portabella mushrooms. sliced
FRESH greenbeans (in produce section - not canned). cut in half if lreal long
stick of butter/margarine

cook ^ in saucepan on stove. adding some black pepper to taste if you'd like.
then sprinkle grated parmesan (or asiago or other variety) on top and serve

Delicious!

i'd do something pasta based, and then you can do any kind of sauce you'd like.

consider --
--> red sauce
--> red or white clam sauce
--> cream/alfredo

tasty!

use lots of aromatics like rosemary, thyme, that stuff is so good.

herb baked chicken breast

Name: Herb Baked Chicken

Category: Chicken

Entree: Main Course

Difficulty: Easy

Time: 1 hours, 15 minutes

Ingredients:
4 to 6 large chicken breasts
1/2 cup dry bread crumbs
1/2 cup parmesian cheese
2 teaspoons parsley flakes
1 teaspoon salt
1 teaspoon oregano
1 teaspoon thyme
1/4 teaspoon pepper
1 stick melted butter

Directions:
1. Remove skin from the chicken breasts
2. Combine bread crumbs, parmesan cheese, parsley flakes, salt, oregano, thyme, and pepper
3. Dip chicken in melted butter then coat with crumb mixture
4. Arrange chicken in a single layer in a shallow baking dish greased with extra virgin olive oil
5. Bake at 350° for 1 hour or until chicken is tender
