So i cooked a 12lb turkey just for myself and now i have all this left over meat i know its healthy and a good source of protein, but what are some recipes for soup/other stuff so i can make the most out of all this food

I have heard that it is great when fried with eggs. (Breakfast)My mom makes Turkey Salad following nearly the same recipe used for Chicken Salad. my mom picks the bones, and takes all that dark meat we wouldn't otherwise eat, adds a bag of mixed vegetables, some chicken soup base, and some potatoes, and boils it all to hell, and freezes that. then you can throw it in a casserole dish and put a pie crust on top, and have a sort of turkey pot pie.

took the carcass this morning, threw it in a big pot, covered with water and added some fresh cut veggies, herbs (mainly herbes de provence and salt+pepper), let it simmer all afternoon and had some delicious turkey soup this evening

I know here in Eastern NC that some of the country restaurants shred it up like they do pork and you can eat it Eastern NC style with the vinegar based sauce...it actually tastes pretty similar too.

Turkey Croquettes Preheat oven to 350. Finely dice 1 onion, sweat it in a large pan with butter, add 1½ cups of milk when the onions are tender. Add salt, pepper, sage, whatever to taste. Add 2tsps of cornstarch and allow mixture to thicken to a heavy cream consistency. Move mixture to a medium mixing bowl. Add 1 beaten egg, turkey bits and breadcrumbs until the mixture has a cookie doughy consistency. Spoon on to ungreased cookie sheet, bake for 12 minutes.Also works with chicken. Dark meat is superior. Goes well with horseradish sauce or wasabi Gourmayo.
