made a pasta dish today. ingredients:

zucchini
onion
tomatoes
kidney beans
garlic
basil, thyme, oregano
olive oil
canned tuna
whole wheat pasta


and i also made the breakfast (porridge) for tomorrow:

rolled oats
chopped apple
sliced banana
olive oil
cinnamon
honey

pepper stuffing (sans bell pepper) :

browned ground turkey that was then simmered with rice and stewed tomatoes. cheese liberally applied to the top. yum.

-toasted garlic slices and red pepper flake in olive oil, extracted the chips when golden, used the infused oil to sautee red chard, put the toasted flakes on top at the end
-sriracha glazed chicken and onions with a sriracha/ketchup dipping sauce

I made the most awesome dinner today... even my 8 month old daughter went crazy over it and wouldn't let us stop feeding her!

Ingredients:

Fresh salmon
Fresh mushrooms
Zucchini
Eggplant
Spinach
Scallions
Garlic
Dried mixed Italian herbs
Whole wheat elbows

Partially sauteed the zucchini, mushrooms and eggplant (with garlic and herbs) in EVOO and then lay a bed of spinach on top and then the garlic- and herb-coated huge salmon fillet. Put the lid on and turned down the heat. The salmon got steamed/baked... it was unbelievably delicious. Threw in the chopped scallions. Boiled pasta in a pot, drained it, and mixed it in, and put the lid on again for 5 minutes for flavors to mingle.


Dessert:

Dark chocolate
Tea
Natural yogurt with honey

Persimmons
Mangosteens
Raspberries
Blackberries


I am seriously thinking of getting a deep freezer so that I can cook a week's worth of meals and freeze them. The salmon I got cost $18.50, and it was/is enough for 4 very large fillets, or about 6-8 portions that you get at, say, Chili's or Applebee's. And a salmon main at those places costs about what I paid for the 2 pounds 13 ounces I bought.

Tonight I made my own recipe... I guess you could almost call it a salad, sans lettuce

It had cut up grilled chicken (which had thyme, basil, and cajun seasoning), red sweet banana peppers, green bell peppers, asparagus, and ophella eggplant. Then I put some sweet chile sauce on top.

WAS AMAZING

i love making salads without lettuce! of course i like the lettuce kind too

but i like just putting a bunch of veggies or beans or pasta (or all of the above) in some kind of dressing and eating it. oh yes, and cheese.

right now i'm eating ziti! but not baked but it is still good!

lasagna is very easy but it typically takes awhile to bake
