I saw the last of my blood orange sangria in the fridge and started sipping on that in the middle of the day on Saturday, when I was also in the mood to bake and had several recipes planned out to make throughout the day. We were out of sage for the beans, for which I was very sad. I didn't do a steamer basket for the chard and just steamed it in a little water in a pan. I'm not sure cooking the stems separately was worth it. I did find out that I really like chard though. I enjoyed this, but probably wouldn't worry about coordinating the three separate foods in the future.58. Puttanesca-ish Egg Salad — Came from the NYT salads list. I posted what the article said exactly in the egg salad thread, but basically eggs, mayo, a little garlic, chopped tomato, red onion, capers, black olives and optional anchovy paste. I did not use anchovy paste and just used a wee bit of mayo and the rest Greek yogurt. I really like the garlicky note in egg salad.

I made bruschetta tonight since I had some stale wheat bread and some tomatoes that were about ready to go. Amazing cannot even begin to describe this. My boyfriend and I gobbled it up which makes me wish I made more. 2 pieces Stale bread/Italian bread (I had a stale loaf of whole wheat bread)Olive oil1/2 cup Tomatoes (I used cherry) chopped1/2 cup Red onion chopped1/2 garlic clove chopped1/2 cup chopped pinto beans (they were leftover from a chili recipe)A few leaves chopped basil (or dry shake basil - 1 teaspoon)1/4 teaspoon saltBalsamic vinegaretteShredded parmesean cheese (optional)Cut bread into squares and place in baking sheet (spray beforehand). Drizzle olive oil over bread. Preheat oven to 350 degrees and place sheet into oven to warm up bread while oven preheats. Chop onion, tomatoes, beans, basil and place in bowl. Add 1 teaspoon olive oil and salt to mixture and blend well. Take bread out when oven is pre-heated and scoop mixture over bread. Place back in oven for 6-8 minutes. Take out of oven and drizzle balsamic vinegarette (I love HT Traders balsamic glaze because it's thicker). Optional: lightly throw shredded parmesan cheese over bruschetta. Serve.

Made chunky chickpea and herb dumpling soup last night. Recipe:1 tbsp oil 1 onion, chopped 2 cloves garlic, crushed 2 tsp ground cumin1 tsp ground coriander ¼ tsp chili powder2 (10 oz) cans chickpeas 3 ½ cup vegetable stock2 x cans chopped tomatoes 1 tbsp chopped fresh coriander leaves 1 cup self-rising flour25 g (3/4 oz) butter2 tbsp grated Parmesan2 tbsp mixed chopped fresh herbs (chives, parsley, coriander) 3 tbsp milk 1.Heat oil in large saucepan. Cook onion over medium heat for 2 to 3 minutes or until soft. 2.Add garlic, cumin, ground coriander, and chili. Cook for 1 minute or until fragrant.3.Add chickpeas, stock, and tomato 4.Bring to a boil, then reduce heat and simmer, covered, for 10 minutes. Stir in the coriander 5.Make the dumplings as follows:a.Sift flour into a bowl and add chopped butter. b.Rub together with fingertips until the mixture resembles fine breadcrumbs c.Stir in the cheese and herbs.d.Make a well in center of mixture and pour in the milk. e.Mix milk in with a flat-blade knife until just combined. f.Bring together into a rough ball (also fun) and roll into small balls 6.Add dumplings to soup. Cover and simmer for 20 minutes or until a skewer comes out clean after inserted in center of dumpling.

^2 I wasn't being defensive, but I do know how judgmental you are.... and that you make baked goods and try to be "healthy" at the same time, all the time. There is nothing wrong with having something like cake batter pancakes every now and then, and not worrying about what they're made of. Trying to decide what to make tomorrow. I want to use some random crap out of my fridge. I have: 3 yellow squash, about 14 oz. of whole stewed tomatoes, ~2 cups tomato sauce, a little mashed sweet potato and ~1.5 cups rehydrated mushrooms that were dehydrated. In the freezer I have one large chicken breast, one whole roaster chicken, a few kinds of fish (sole, whiting, flounder and tilapia), corn, field peas and snaps, and lots of homemade veggie and shrimp broths. Any ideas on what to do? Of course I have a bunch of other stuff too but that is the stuff I'm trying to use up.

cube the chicken breast and brown it. then make a shepard's pie type dish with all the veggies and the chicken and a little broth and top with the potatoes. bake 25-30 mins til it starts to brown a bit on top and everything is bubbly in the veggie layer. top with breadcrumbs or a bit of cheese before baking, or spring onions after.i'm trying that cucumber fix now![Edited on February 28, 2011 at 9:29 PM. So I hear Harris Teeter is having an amazing sale on whole chickens, like $.59 a pound. Outrageous! I am intimidated to cook them that is why I have not bought a few yet. Any suggestions for a new recipe that incorporates a whole chicken? I might also buy more and freeze them.

^^ I would but I just had chicken pot pie (for the first time since I was like, 6) yesterday and that feels pretty similar. I am thinking paella with some of the fish, chicken and shrimp. We shall see. Hope you like the drink. It's pretty delicious. ^ They are SO EASY in the crock pot. Just put the whole chicken in and rub it with some seasoning and turn it on. No broth or anything needed. That was the first recipe I did this year and it was so easy and good. I was pondering doing that again tomorrow but will probably save it till later. I buy mine frozen and they are like $4 per chicken that you get several meals out of.

It seems like a non-yeast recipe would be OK if you like chewier or more thin-crust types of pizza, but not so much for normal, softer dough. 59. I didn't have fresh mushrooms so I used rehydrated dehydrated ones I had on hand. Not quite as good in terms of holding together, I think, but I still liked this a lot. And there is something really fun about mushing up meatloaf with your bare hands. 60. The finished product has more protein and less fat than regular PB. I have nothing against fat at all and make strides to get enough of it rather than cut back, but I like the idea of being able to have a bigger serving of PB with more protein. Apparently Trader Joe's doesn't carry it anymore so you have to order it online (or probably places like Whole Foods would have it, but I don't actually know). I am going to order some so I can play with it more, because it seems like it has potential. This didn't taste like Nutella at all but it was good on a banana.

Instead of garbanzo beans I used a chicken breast and put some shrimp on our servings. Also used shrimp stock and no green beans. I love one-dish meals. Yes, but we didn't have enough left for the whole batch (it makes a ton) so I just did the shrimp on top so I can get more later. Also I hate reheated gross shrimp.

I made greek spinach rice last night...mehhh Recipe:2 pounds of fresh spinach 1/2 cup of olive oil1 large onion, minced5 stems of fresh dill, coarsely chopped (1 teaspoon dried) or 2 sprigs of fresh mint2 tablespoons of tomato paste1 cup of uncooked converted rice2 1/2 cups of watersea saltfreshly ground pepper1 lemon, cut in wedgesPreparation:Preheat a heavy-bottomed pot on low heat. wash spinach, chop, and set aside to drain. When the pot is preheated, add the olive oil, increase the heat to medium, and sauté the onions until translucent. Add the dill (or mint) and spinach and sauté about 5 minutes until wilted. Dilute the tomato paste in the water and add to the pot with salt and pepper to taste. Increase heat and bring the mixture to a boil, add the rice, stir, and cover. Reduce heat and allow to simmer for 20 minutes or until the water has been absorbed. Do not stir during simmering.

^^ I'm a 5'0" 115-lb. girl and I'm losing weight on what I post here. You don't have to eat plain boiled veggies and chicken breast to have healthy or low-cal food. Just stick to actual food in appropriate portions and be mindful.
