There is a greater day and a sunrise on the horizon for true love. True love happens when you just act like yourself. It sounds as though you cannot act as yourself around her, and she sounds extremely manipulative.
I don't think it is a psychological problem due to some kind of brain chemistry/disorder. I genuinely think it is intentional manipulation (based on the limited information provided), and she is playing you.
The biggest thing that really made me feel for you the most was the fact you mentioned she ran up your bar-tab while you were away from the bar. That is symbolic and bitchy in so many ways that she doesn't give a fuck about you or sharing social experiences with you to the level that would be expected.

I think you should save yourself from further harm and GTFO because this bitch will drag you down, and I am sure she has had interactions in the past alleging cruelty during her greencard divorce and has been the dramaqueen at the bar saying that someone did this or that to her. I can read between the lines. Get out while you still can!

While we're on the topic of dating...

Is it cool to be totally open about being crazy/insecure?

Once a month or so, I like to send a string of text messages calmly explaining to my dude that he doesn't actually enjoy my company or find me attractive. He cuts me off with a phone call where we discuss how I'm awesome, he needs to "do better" at making me feel that way, and I need to "do better" at not being crazy.

We ain't gettin hitched or nothing so it's whatever, but still...are other people like this, or are we supposed to like hide our bad traits and stuff?

(I've at least stopped doing the thing where I get drunk, break up with him, and traipse off into the night, answering the phone only to explain that he shouldn't reward my bad behavior with attention...then come back a couple hours later to wake him up and announce, "We're still together! Aren't you so happy?!?! LOLOLOL Seriously though, goodnight and shit. Wake me up so we can get breakfast.")

Nah, he's grown, but he's an actual nice guy. I'd say his calling after me is 50% genuine concern for me and 50% going through the motions of a "relationship." The first couple times he ran out after me, which, from my perspective, was extra fun and romantic. But I still know it's no good to behave that way, and I openly address it. I dunno...crazy people need love, too!

Anyway, I think he's pretty special, but he won't be around long. I'ma miss him.

Yeah I don't think there was anything psychological going on either. Honestly I think she has a lot of narcissist tendencies. Not in a grandiose or materialistic way but in a cerebral I'm always right, smarter than everyone else way and she increasingly acted more selfish as time went on.

Yeah she firmly believed that since she went to Colorado she has seen the "west coast", was not impressed, and so no reason to ever visit CA, OR, or WA lol. I had to give up trying to convince her that Colorado is not west coast and that there are several different cultures.

It's the absence of punctuation and correct-but-weird tense changes that are bothering me.
