Just over 4 months. 4 months of paying rent, bond, insurance, utilities (including improvements of plumbing & electrical), and for equipment that we couldn't touch, but had to have before submitting paperwork. They do not make it easy to survive as a small startup

We ordered some rum yeast for initial recipe crafting. It comes in kilograms. We have made an official company decision to refer to all yeast orders in terms of "__ kilos of yayo".

^^ 2 kilos of yayo was used for testing recipes. We are ordering 20 more kilos which should last us a month or two of full production.^ The white rum, not long. Just some oak chip treatment and basic oxidation for a week or two to smooth it out and get it on the shelf. We have to get something into the stores ASAP or we will be sunk before we've even started.The spiced/aged rum to come later will mature as long as we feasibly can. We plan on proper barrel aging at least 500 gallons for 1-2 years - this will be a limited release. [Edited on January 13, 2015 at 3:09 PM. Reason : aged]

After many years of drinking it and trying to like it, I've come to determine that I actually HATE rum. I don't hate the taste; it's fine for the most part- even really enjoyable if it's aged or expensive. It's the effect it has on me. Overall, I really hate the cheap buzz that it provides and how quickly it wears off. I can drink a ton of the stuff all night and it gives me the feeling of being hungover the entire time I'm drinking it. Not sure what it is, as I've tried some really expensive and fine rums, but it's my least favorite alcohol to drink. If I never have another MaiTai, it'll be too soon.

Rum is the only liquor I'll sip. ^ I, too, love Ron Zacapa. I also want to branch out and try some other nicer rums...but nice cocktail bars usually stick to the bourbons and scotches when going high-end. There was a nice rum bar in downtown Asheville when we went up there for our anniversary, but only had enough time for one cocktail.

I've had Ron Zacapa and other expensive/premium rums. IDK what it is, but I just feel horrible whenever I drink the stuff and I can't really figure out why. Vodka, bourbon/whiskey, and tequila work just fine, so I'll stick to those. FWIW gin doesn't do it for me either.

Could be the specific congeners you find in rum as a by-product of the distillation of molasses wash. A general rule is that the darker the spirit, the greater the potential hangover. Maybe if you just stick to white rums, you'll be better off, but won't really be able to do any sipping.Our white rum is going to be near a clear vodka. It's going through a 6 plate reflux still and we have it coming out at about 85% through the hearts of the run, it's clean and you get some sweetness from the molasses. We may do a second distillation of it as well to make it even more refined. It won't be as smooth as something that is aged in oak (we are in a rush to get the white on shelves right now), but it will be fine for any sort of mixing.I am pushing to do a "silver rum" as a white rum with added natural flavors to make it sweeter and include some hints of vanilla, right now we only have label approval for a straight white rum that we cannot add anything too. If we add anything post distillation, then it is basically a 3 month federal review period before we can sell it. Spiced will probably take a priority before the silver.

Anyone with experience with reverse osmosis systems? We have a 200GPD setup, used, but we got all new filters and it leaks like crazy plus doesn't put out near 200GPD. Could use a hand before we trash it and buy brand new.
