I can't believe I've never posted in here b4...cheese is my all time favorite. That said, I'm an equal opportunity cheese eater.

My girlfriend's relative rented a beach house in Emerald Isle. He's not a snob but he thinks he is when it comes to cheese and wine (in reality he just has the money to buy everything he's never eaten, and the appetite to want to eat everything). So we went out and bought about ~250 worth of cheese that will get the family through maybe 4-5 days of eating, gesh. It's pretty tough to get gourmet cheese in Carteret County but luckily I know a few gourmet provisions stores and some top-notch bakeries. He's real big into sheepsmilk cheese right now, but only the really rare shit I had no chance of finding. He likes goatsmilk cheese a lot too but again he likes the rarer kinds. We've gotten some great cheeses so far this week, new ones that I'd never tried and some good versions of my staple cheeses (Fontina, Gruyere, Jarlsberg, Monchego, Sage Cheddar). Along with good biscuits and crackers (though honestly wheat thins, triscuits, and "gourmet pretzel chips" are my favorite) and rare wine that only rich bastards like this guy can afford, it makes this beach vacation about a million times more awesome.Thank god for rich Jewish in-laws.

humboldt fog, brie, sharp cheddar, and gruyere are the ones I keep around. But I also keep some of the "processed cheese product" kraft slices in the fridge, so I'm really not that picky

I got to try some guiness-laced cheddar last summer, and haven't been able to find it nearby since. Not even at Murray's I'd love to get my hands on this stuff

Trader Joe's has a marbled cheddar/porter cheese that would probably be similar to the Guinness one.
