Wednesday is typically Mexican Night.

I'll make guacamole, salsa, jalapeno poppers, quesadillas and soft tacos.

i had way too much to eat for dinner today. but it was a dinner party, so it was free!!!

3 lamb chops
1 steak
1 baked potato with shredded cheddar cheese
sliced tomato and buffalo mozarella generously drizzled with olive oil and balsamic vinegar
1 slice of chocolate pie
Dr. Pepper ---> first time ever in 10+ years... I loved it!

I started to make chicken, and was gonna eat it with some couscous I planned to salvage (made it too salty last night)
canned peas and couscous don't go well together. Adding fresh carrots doesn't do much.

I decided to see what I could do with coconut milk. Lots and lots of cayenne whisked into that did some, but I added even more cayenne, and some ginger, and it's tasty

For the chicken, I rubbed with old bay (the garlic herb blend) and lemon juice, and was gonna pan fry it, but I had leftover carrot...so I shredded that and cooked them together.

The chicken is good on it's own; I'm eating it with some of the couscous mix right now.

damn i forgot about this thread

that sounds good but also sounds like a lot of effort.

i mean, steaming broccoli requires a pot, a steamer, and fresh broccoli.
