^^ It is a cheese that doesn't melt (probably the only one?), rather, on a grill or in a pan, it grills to a nice golden brown and becomes crunchy from the outside (if you grill it enough). It is nice sliced thin in sandwiches, and chopped in a salad with tomatoes, avocado, spinach/arugula, fresh mushrooms, and a touch of balsamic vinegar.

does anyone know where to get that mexican white cheese? it comes on tacos but it also is the melting kind for cheese dip and enchiladas and stuff?i think it is just called like queso blanco or something (per google) but that doesn't really help. do i need to go to a mexican mart? i've never seen it in a "regular" grocery store. or at least i don't think - i've looked in both the nice cheese section by the deli and the regular one.if i go to a mexican grocery store i guess i could stock up on all kinds of yummies! but i esp want the cheese...whatever it is
