Neuse do you do your Turkey direct or indirect? I normally do my chickens direct but am thinking that the butter on the Turkey might cause flare-ups? Do those even happen on an Akorn if it’s closed?

Tested out the Plowboys Yardbird last night on a chicken and thought it was really salty. Trying to figure out a backup plan. I have some DP Raging River that I could mix it with. Other option would be to mix it into unsalted butter and slather it all over the turkey.

Yard bird is ridiculously salty. You could mix up something of your own. I prefer a savory seasoning on a turkey instead of a traditional BBQ sort of flavor. Something like Mrs. Dash or Emeril's Essence. I always keep those around.

If you do want traditional BBQ flavor, I make Myron Mixon's "only other rub you'll ever need" and put a couple personal twists on it. It's pretty basic. You probably have everything needed for it in the pantry.

I’m planning on smoking a brisket Sunday night, and typically when I smoke a brisket or chuck roast I put a pan of canned baked beans underneath because beef fat drippings are incredible. This time I’m playing with the idea of starting with dried beans and seasoning them myself instead of canned beans. The recipes I’ve seen show a 8 hour crockpot time and anywhere from 4-8 hours in a Dutch oven depending on the temperature. The brisket will take probably 15-20 hours at 225, so surely that’s plenty to cook the beans right?

^nice! any pics of the center? One thing I've been doing lately that I really love is taking day old rice and frying it on the griddle side of my Weber. You can actually use nonstick spray instead of a ton of oil that you'd normally use in fried rice so it's healthier in that respect. It comes out amazing, with lots of crispy bits kinda like Kanki. I usually throw in some egg, onion (green or yellow), etc. along with it and drizzle soy sauce just before I take it off. It takes on a nice smokiness and gets more crispy bits than I'm able to get on my wok (over gas with wok ring) and it's much easier to clean up. Smoked salt is another new discovery of mine that I've been really enjoying.

I’ve been getting into grilling lately. Got some small portable grill A few years back that uses small propane canisters for camping. Did a lot of chicken lately and some burgers, been happy with it.

My dad has a very similar model to your red one. You're right, it's at least 25 years old. We've replaced the parts 3-4 times now, but it still ignites on the first try every time. It's a great grill.

Yeah, just sear outside. Cast iron over the raging hot vortex or on a turkey fryer burner. I've got a 2 burner camp chef that does great as well.

Seared over the Vortex and then set to the side to finish indirect. Maybe the best chops I've ever done. Some quality pork from the Kau butcher shop in Greensboro.

Now that I'm finally out of an apartment and into a house with a yard, one of the first things I bought was a Chargriller dual grill (one part for gas, one part for charcoal, also has a spot for a smoker attachment). One of the few bright sides to quarantine has been plenty of time to learn and experiment with it.With the wife being a wannabe pescatarian, there's been a lot of fish on the gas side. Did catfish on there for the first time this week, and I'm really pleased with how it turned out - more of a "meaty" texture than we get with some of the other white fish we do, which can be a little soft for my taste. And like I saw, she's a wannabe - her birthday dinner request was cheeseburgers, and for being my first effort at making them from the patty on up, I think it turned out pretty well. I do a banh mi-style chicken that's also consistently superior to my old method of roasting.Does anyone have any experience grilling goat? I'm hoping to replicate some goat dishes from my time in Africa but have never cooked it before, and don't know if there's anything to watch out for there.

Friend of a friend’s parents run some Brazilian steakhouses and let a few friends grab a box of picanha that was in 6 bags with 4 sections each. Same place our local fogo de chao gets theirs from. Turned out well and ready for more. 22oz that I sous vide at 130 for just about 3 hours and then finished in the pan that had some bacon grease in it.

That is an option, especially if you plan on doing some smoking. But I will tell you they don't really weather well through the years very well. Still a great value vs a big green egg etc, but if I had to do it again I'd probably look at a Vision or similar ceramic based kamodo.If you're not gonna smoke a bunch of meat you need a Weber kettle, of whatever flavor you can find. They are affordable new, or score a nice deal on one used (and you can smoke on a kettle I did it for year)The Performers are quite popular, but you don't need to get the best example right out the gate.
