Vinegar based choppedpork butt after a long dry rub rest and injection overnight. Applewood and hicory smoke usually. I then make my own memphis sauch for those who want it and put it in a convenient little ketchup bottle bought from the lowes foods. Serve with extra georges on the side for those who need more vinegar. Everyone then seems happy with choices. Cut a few longer pieces of flank before the cleaver and knife chop should someone not liked chopped but I usually end up tossing that on a sandwich later. I think good mustard is a fine delicacy but I do not use it in my BBQ.

You can drench it in tomato paste, brown sugar, mustard, and vinegar...and if it's somehow still too dry, I'll just mix it with mayonnaisey coleslaw and eat it on a butter-soaked bun.Whoever's posting pictures of a cow be foolish.
