Here's the thing that kills me. You'll see a bunch of neckbeards on TWW smashing their keyboards to tell you as quickly as possible how much better Eastern BBQ is. It's all about where you grow up. I don't know anybody that grew up in Western NC that likes Eastern better, and vice versa. Not only that but Eastern style BBQ is soggy garbage that tastes like a steaming pile of dog shit. Western style is where it's at, so most people from Eastern NC are completely wrong.

I pretty much enjoy most forms of BBQ, as long as it's seasoned and cooked correctly.Austin and Texas in general have excellent beef brisket. This isn't up for debate.I like St Louis/Memphis DRY rub. Burnt ends are fantastic.I like eastern NC BBQ as long as it's not too dry or too wet. Good eastern pulled pork has a soft texture and proper balance of vinegar and chili flakes where they blend together. I like western about the same overall, but as long as it's not too sweet. Course chopped is my go-to and I like the slaw as well.SC BBQ is alright, but if it just tastes like yellow mustard, no thanks.California tri-tip is vastly underrated and since the BBQ out here is generally crap, I grilled it up myself pretty frequently and use the juices and some red wine to make a gravy

You can absolutely "BBQ" tri-tip. It's pretty quick and easy on the grill, but smoked tri-tip is amazing. Maybe you should try it sometime since you like brisket.
