anyone ever tried biltong?http://en.wikipedia.org/wiki/BiltongI love jerky and all, but one of the best things to come out of marrying into a south african family is access to biltong. the shit is amazing.

^looks good

I make a batch every week. Been using hot and spicy seasoning. Turkey makes the best jerky from what I've experienced. Very little fat when compared to beef jerky.

I crave jerky.Take me the through the entire process.
6/7/2012 1:52:38 PM

BTTTMy dad's friend's son just opened Banzai Jerky. My dad ordered a bunch of different of his jerkys for us to try. I am hooked on the teriyaki and orginal peppered. Its pretty reasonably priced too. the 3 oz bags are $8 plus $2 shipping per bag. I ordered two bags last week for $20 shipped and they showed up today. I am currently devouring one bag http://www.banzaijerky.com/

Bought a beef round roast yesterday. Sliced it as thin as I could with the grainMarinade:Teriyaki Soy sauceWhorchester sauce Garlic Black pepperBrown sugarDidn't measure any of the ingredients but it was a full bottle of teriyaki and few table spoons of the rest. About a cup or so of brown sugar. 2 garlic cloves. Marinated overnight. On the dehydrator about 9 hours. Mmm good.
3/11/2013 5:13:31 PM
Do they serve this at the Ethiopian restaurant?
3/11/2013 6:18:52 PM
My best batch yet1 London broil partially frozen. Thawed just enough to be able to cut it. Sliced as thin as I could with the grain. Marinated in teriyaki, brown sugar, little bit of soy sauce and black pepper over night. About 6 hours total time on the dehydrator. Mmmmmm

Asked for a food dehydrator for christmas for drying fruit and making jerky. I've only used it once, and haven't touched making jerky yet. I'll try some of these recipes and see how they turn out.[Edited on April 1, 2013 at 8:35 PM. Reason : oh for fuck's sake]

where's a place to get a good variety of jerky in bulk for non-outrageous prices, either locally in raleigh/cary or online?
4/27/2013 12:15:50 PM
Damn I'm craving some jerky. Time to break out the dehydrator. Have any of you tried marinating your jerky with wine?
12/5/2013 6:13:32 PM
^ hook me up with some
12/5/2013 6:14:32 PM
Gotta make it first I haven't made jerky in a long while so I'm rusty and it might take me a couple of tries to get it right. I want to make something that's kind of unusual. Ideas?
12/5/2013 6:27:59 PM
Ditto on the craving...will also be breaking out the dehydrator. Might make a good drunk snack this weekend
12/5/2013 7:52:17 PM
I have got some biltong at home... hmmmm

After 29 years I have finally discovered the glory of Jerky.Growing up it was always presented as some kind of trashy redneck snack, so I stayed away from it, but now I feel like I've been cheated.I've been really digging turkey jerky as a snack for my weight loss diet. I'm going to attempt to make some next week. Anyone got a favorite recipe?
12/6/2013 11:18:42 AM
Tried to make some salt and vinegar flavored jerky about a month ago and it didn't turn out so good. I think I need to make plain jerky and then maybe mist it with some vinegar. I tried marinating the meat in vinegar for about half an hour before dehydrating it and the vinegar cooked the meat which made the jerky super tough.

Try thishttp://www.amazon.com/Buffalo-Wild-Wings-Seasoning-Vinegar/dp/B00DJA4XGAI always get it on my fries there, but I think it would work on jerky just fine.
3/13/2014 7:10:46 AM
Has anyone had the butcher slice their jerky instead of the freezer trick at home?
3/13/2014 10:20:32 AM
Nerp, sorry. For those that make turkey jerky, where do you get your turkey meat? Whole foods sells whole breasts that have been removed from the bone, but they are expensive. The last batch I did I bought 2 turkey breasts from BJs, but I had to cut each off the bone, then slice everything up. It took hours, and I'd rather not have to do that again. The bonus though was that I ended up with 4 lbs of finished jerky and half a gallon of top notch turkey stock.
3/13/2014 10:45:41 AM
synapse, I usually get my jerky sliced at a butcher. It comes out much more uniform and the thickness is always perfect.
3/13/2014 11:04:21 AM
^^ I usually buy my boneless turkey breast from kroger, but I've never used it for my jerky.^^^ I have a meat slicer at home that I use
3/13/2014 11:08:10 AM
Do you need a jerky gun to make jerky from ground beef/turkey? I'm not into wasting money or having excess junk at the house and this tool just seems like an example of excess products I don't need. I don't really see any reason not to just mix/mash it up by hand, roll it flat, and cut it into strips to lay in the dehydrator. What does TWW think?
3/29/2014 3:16:22 PM
why would you make it from ground meat? and i can't imagine you would need one. alton brown would crucify you for getting a unitasker.and ever since I first heard about it on 6/7/2012, i've kept my eye out for biltong and haven't found it yet.
3/29/2014 8:16:57 PM
^Its for making jerky more like a Slim Jim.I've never used it or desire to, but I don't see why you couldn't just work it flat and then cut it into strips.Anyone got a good soy and gluten free recipe? Almost everything I've made calls for Soy sauce or teriyaki and worcestershire.

Hey, folks. The wife's going to visit a friend in Israel, and the girl has been been craving some jerky. Apparently, it's hard to find there? Any suggestions for some great jerky to be found around Raleigh?
6/5/2014 1:50:52 PM
I love this stuff.
6/5/2014 8:17:06 PM
I've actually found a better selection at Target than most places, including whole foods and other grocery stores.

my neighbor made me some deer jerky from a doe my wife killed. it was good. he wouldn't tell me what he puts in it.
12/31/2014 7:13:20 PM
got a hind quarter off a deer from a buddy and decided to turn it all into jerky. got it in the dehydrator now. put some liquid smoke in there and the house smells awesome.
10/31/2018 5:18:02 PM
It turned out awesome. I think I'll add some cayenne next time. Only did crushed red pepper this time.
10/31/2018 8:01:43 PM
Got some more deer in a chili lime marinade now.
11/8/2018 7:05:00 AM
My first attempt at making jerky, earlier this week, did not turn out well. It's edible, but that's about it. I wouldn't call it enjoyable. I'm eating it though because the flank was $12 and I don't want to waste it. It was a soy based marinade and it tastes like I'm just eating soy bits.
11/8/2018 7:35:16 AM
there's a Beef Jerky Outlet in Garner
