I would like to revise my 9 year old decision here.

I love Crystal, but Franks is the best hot sauce.

Of the mainstream ones, Cholula is my favorite. And I use Frank's on my air-fried wings.

I'm going to (hopefully) be making some different ones this summer, with Fish Peppers, Buena Mulata (that's racist!) Peppers & Lemon Jalapenos. Last year I started experimenting with fermenting.

I keep Texas Pete, sriracha, Tabasco, Cholula, and Tapatio on-hand. And Frank's wing sauce for wings.

valentina, el yucateco, tabasco chipotle are the general ones i always have

dirty dicks, bigfat 7o8, blair's original death sauce are all good too but more specialized

trader joe's green dragon sauce is good, and their habernero sauce is pretty decent as well

In my cabinet right now:

Cholula (original)
Cholula (green pepper)
Frank's
Red Devil
Adoboloco Pineapple
Adoboloco Maui No Ka 'Oi
Habgoblin Mean Jalapeno

The first four are staples. The last three are souvenirs from travel ('Buy Local' stores can be hit or miss, but these three happen to be decent).

I like Frank's, but the association with hot wings is too great for me to use it as a daily driver.

I do it a little differently each time, and I usually try to keep it simple. But usually I put them in a bowl and toss them with a little Frank's and black pepper. Cook them (at 400 iirc) 11 minutes or so, flip 'em and another 11 or so, take them out, put them in the same bowl, douse them in Frank's and a little melted butter, and I'll often put store-bough bread crumbs on them, toss them, then cook them another 6 or so minutes until they're ready. I keep wanting to actually do the real breading (flour and eggs and all), but I don't feel like taking the time and dirtying multiple bowls.
