OK so the plan is to secretly go to target, by the $6 hand mixer, and bring it home without Tyler seeing...this way I can start baking again, b/c its been awful without flour on my countertop.

Dan and Tamara's Bdays are this week so I'm making them Birthday Cookies...

Andes Mints Choco Chip Cookies:




What I needed

Dry

Wet

Mixing together wet items

Adding the eggs

Adding the flour mix

Mixing up the batter

I could just eat it this way, but I suppose I'll bake them...

Ok, so I was going to make pound cake cupcakes with homemade whipped cream for the 2 birthdays we're celebrating at work this month - but now I'm thinking of chocolate cupcakes with raspberry buttercream frosting...

So I have never made raspberry buttercream frosting so I wanted to try a test run before making my co workers eat it - Tyler suggested just making sugar cookies and frost those.

Now, I'm not proud of it - but I bought one of those sugar cookie mix packets for the sugar cookies, since it was a last minute idea.

So here are the cookies:


Just the mix you can find in the packets

It takes so good I was very excited it came out better than I had hoped it would.

Nothing too fancy for the final product since it was last minute...


Cant wait for tomorrow night - will be baking the chocolate cupcakes and frosting them. I was thinking putting raspberries on top as a garnish, but I dont know if that would be too much

(Oh! And while making this, I made cinnamon rolls to go with dinner - it was a stellar night)

Chocolate Cupcakes with Raspberry Buttercream Frosting have been baked!


Hello, shiny cupcake papers!

Not happy I had to use a prepackaged cake mix - but I was behind schedule so it had to be done

Looks like moon dust.... mmmmm, moondust...

Adding water and vegetable oil

A chicken pooped my cake mix! How dare!

I have never heard of Andes mint baking chips. Where my waistline is concerned, that was a very good thing.

What are your proportions for the raspberry buttercream frosting? That looks fantastic!

And does anyone have a favorite recipe for sugar cookies? I googled it and got way more results than I was looking for.

My latest baking adventure: amaretto truffles. I used a recipe for bourbon balls, they came out really well, but kind of moist, and only retained their shape if cold.

stick of butter (not salted) and 1/4 cup of raspberry jam (make sure its seedless) then i added a cup of powdered sugar until i got it how i wanted it.

as for the truffles - i have that same issue with them retaining their shapes - i normally put mine in the freezer overnight and that seems to help

For Christmas my mother in law got me an ebelskiver pan and I hadnt gotten the chance to use it yet...until NOW!

(for those of you who don't know what an ebelskiver is, its basically a small filled pancake)

I decided to make an orange batter - and my filling was cream cheese. The pictures I'm going to post aren't as "delicious" looking as cookie and pastry pictures, but here they are:


Ingredients

Egg yolks!

Milk, butter, egg yolks and orange juice.

Dry ingredients

and you mix it all up

Egg whites only

Waiting for those peaks to form (my non favorite part)

Good enough - tired of mixing and waiting

Time to fold the egg whites into the batter

Put butter in the bottom of the wells so the batter doesnt stick

Batter is good to go

cream cheese is too!

Flipping time!

Now cooking the other side.

Cream cheese in the middle.

Ok so I'm going to post the Chocolate Cranberry Chunk cookie recipe:

Ingredients:
1 3/4 cups all purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter, softened **If you dont have time to soften the butter, put it in the microwave for like 15 seconds**
1 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 pkg (12 oz) semisweet chocolate chunks/large chocolate chips **Do not use milk chocolate - they wont taste quite as delicious**
3/4 cup dried cranberrries


Directions:

Preheat your oven to 350 degrees.

Combine dry ingredients (flour, cocoa, baking powder and salt) in a small bowl - set aside.
Beat butter, granulated sugar and brown sugar in a larger bowl. The end result should be light and fluffy - then add 1 egg and your vanilla until well blended. Beat in flour mix gradually on a low speed **unless you want to redo your kitchen in white** Once blended, add in your cranberries and chocolate chunks.

Drop dough onto ungreased cookie sheets (about 1/4 cup each) and flatten dough with bottom of a glass dipped in additional granulated sugar.

Bake 11-12 minutes. Cool for about 2 minutes on cookie sheets then transfer to wire rack. Make sure you allow cookies to cool completely - eat them within 24-72 hours - they start to get crumbly if you make them last longer. **Note that your baking time may differ with your oven**

I did all the dishes and laundry today and as my reward, I made Chocolate Chunk Cookie Bars:

(disclaimer - i'm not posting a recipe for these b/c its seriously a chocolate chip cookie recipe pushed into a pan and baked - and if you dont have a recipe for chocolate chip cookies, you wont be reading my thread to begin with however, i can give you approx times for whatever size pan you use)


Ingredients

Flour mixture

Sugar and butter...

and you mix it all up

add your vanilla and egg

and you mix it all up

dough is ready to have the chocolate chunks added...

i actually added semisweet morsels along with the chunks since I'm a chocoholic.

press into a pan sheet (you can use a 13x9 or a 15x10 - just make sure you adjust for baking time)

into the oven, my pretty!

you know they're almost done when the top is a golden brown

cut half of them so far - you can see how chocolaty they have turned out (i somehow need to stop making my cookies soft and gooey, bc thats not always best for cookie bars)

After Tyler and I split one, he decided he likes them. I can pull out the taste of the unsalted butter which I'm annoyed with, but I guess they turned out ok.

I wanted to try making a Cocoa frosting with flecks of the candy Whopper for a cupcake idea I thought of earlier in the week

Ingredients

Started with powdered sugar and cocoa powder

Add butter and vanilla

How much milk you use is going to change both the taste and consistency

and you mix it all up!

Added ground up candy Whopper pieces to help put that malt taste into the frosting

Final product for the frosting...


Now to test it on some cupcakes...

Also put in some ground up candy Whopper pieces to see if you'd be able to taste it in the cake

Into the oven, my pretties!

Burned my arm on the door of the oven taking the tin out.

Luckily, the cupcakes were not hurt in the process.

It's ANGRY!
