is it like regular goat cheese? or just a white, more solid cheese made from goat's milk?

If it's regular goat cheese I would make a salad with some mixed baby greens, warmed goat cheese with pears, almonds, and some sort of honey balsamic vinaigrette

Appenzeller swiss is the heat. Gruyere is also awesome. Really I like all kinds of cheese though...

I also like the port wine cheddar cheese balls, or that spread you can get. Perhaps not high-class but damn tasty.

Cottage Cheese (large curd)

Feta (fresh)
Parmigiano Reggiano
Ethnic soft fresh cheeses from various countries made of various milks (as long as there isn't too much salt)

I love cheeses... and love to try new cheeses. However, I don't like cheeses which are very pungent in smell or taste. As you will see, my list only has mild tasting cheeses.

equal parts, cut into cubes:

- cucumber

shake with Paul Newman's Light Balsamic Vinaigrette

yesterday when i left the grocery store and i was putting my groceries away i realize i came out with:

a block of colby jack
a block of sharp cheddar
american singles
muenster slices
cottage cheese
shredded parmesan cheese

same day fresh cheddar so it squeaks in your teeth is a little slice of heaven.

triple creme brie or camembert is great, goat and sheep milk brie are great too. I also love Emmentaler, a good stilton, roquefort or danish bleu, Sage Derby, and gournay (like boursin), and pecorino romano.

and that port wine cheese spread stuff is baller on crackers

swiss parmesan and white cheddar and gouda are also delicious and I always put ricotta in my tomato sauces

^^^ i LOVE white cheddar. i don't know why it is just so yum. i love ricotta too.

i also realized i bought cream cheese yesterday too. not that it really counts. but damn i didn't realize i bought so much damn cheese.

i need blue cheese and fresh mozz though to feel complete. oh and some feta.

I had some new cheese this weekend- pretty good

a habenero chedder:



it was from the ashe county cheese factory, and it is the first pepper cheese that I actually thought was pretty spicy (It wasn't HOT hot, but it did let you know that peppers were in there)
