Appenzeller swiss is the heat. Gruyere is also awesome. Really I like all kinds of cheese though...I also like the port wine cheddar cheese balls, or that spread you can get. Perhaps not high-class but damn tasty.

same day fresh cheddar so it squeaks in your teeth is a little slice of heaven.triple creme brie or camembert is great, goat and sheep milk brie are great too. I also love Emmentaler, a good stilton, roquefort or danish bleu, Sage Derby, and gournay (like boursin), and pecorino romano. yum cheese!

I had some new cheese this weekend- pretty gooda habenero chedder:it was from the ashe county cheese factory, and it is the first pepper cheese that I actually thought was pretty spicy (It wasn't HOT hot, but it did let you know that peppers were in there)
