2 pounds Ground beef1 can (29 ounce size) tomato sauce1 can (29 ounce size) kidney beans w/liquid1 can (29 ounce size) pinto beans w/liquid1 medium Onion, diced2 Green chili, diced1 Rib celery, diced3 medium Tomatoes, chopped2 teaspoons Cumin powder3 tablespoons Chili powder1 1/2 teaspoon Black pepper2 teaspoons Salt2 cups WaterDirections:Brown the beef and drain the fat off. Crumble the cooked beef into pea size pieces. In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat. Cook stirring every 15 minutes for 2-3 hours.

1.5 lbs ground beef1 onion, minced (about 1 cup)1 Tbsp jalapeno, seeded and diced3 garlic cloves, minced5-6 Tbsp chili powder (split in half) *I use dried anaheim, ancho and chipotle peppers seeded and freshly ground, but store bought powder will do3 Tbsp cumin (split in half)2 tsp paprika (split in half)1 15-oz can peeled diced tomatoes1 8-oz can tomato sauce1 15-oz can kidney beans, drained1 cup water or stock1 Tbsp vinegar1 bay leafsalt to taste (1-2 tsp)1 tsp dried oregano1/4 tsp cayenne pepperBrown ground beef in a dutch oven or stock pot over medium heat. Remove beef from pot and drain excess fat.Add onion, jalapeno, and garlic to the pot; saute for about three minutes.Add the half of the spices (chili powder, cumin, and paprika) and let toast for 30 seconds.Return the beef to the pot and add rest of the ingredients (except the remaining half of the chili powder, cumin, and paprika) and simmer for 1 hour, stirring occasionally.Add remaining half of spices in the last 5 minutes.I like cheddar cheese, green onions, and pickled jalapenos thrown on top of mine.[Edited on March 29, 2009 at 10:35 PM. 2 tablespoons olive oil1 diced sweet onion3 finely diced cloves of garlic4 diced jalapenos1.5-ish lbs. stewing beef cuts1 lbs. lean ground beef1 can Hunt's Seasoned Diced Tomato Sauce For Chili1 small can Hunt's Tomato Paste1 can Ro-Tel Diced Tomatos and Green Chilis1 can beef broth2/3-3/4 large bottle of Yuengling Lager3 cans light red kidney beansapprox:2 tablespoons cumin1.5 tablespoons coriander1.5 tablespoons hot chili powder1 tablespoon baking cocoa1-2 tablespoons salt & pepper3 tablespoons brown sugarplop of chili sauce1-2 dozen blurps of louisiana hot sauce (i put in a good bit because the sound it was making was funny)lil bit of fajita seasoning* heat the oil, throw the onions and meats into the pot and start cooking them* keep cooking until most of the liquid is boiled off/rendered down* throw in the diced garlic and jalapenos* dump on the broth, beer, tomato stuff, 2 cans of the beans, and seasonings* simmer for 1.5 hours* taste, add seasoning if needed* dump in last can of beans, blurp in some more hot sauce, simmer for approx. another hour (this tenderizes the stew beef even more and boils off the beer smell)* holy shit it's done i hope you have a clean bowl and spoon* om nom nomand that's about the gist of iti filled up my large pot with this (12"R x 7"H) so i'd say it makes a good biti'll probably make it hotter next time

it's called for in several of my recipes, but I've never tried it. I am not big on chocolate anyway, as I have a minor food allergy to it, so to leave it out means nothing to me
