2 pounds Ground beef
1 can (29 ounce size) tomato sauce
1 can (29 ounce size) kidney beans w/liquid
1 can (29 ounce size) pinto beans w/liquid
1 medium Onion, diced
2 Green chili, diced
1 Rib celery, diced
3 medium Tomatoes, chopped
2 teaspoons Cumin powder
3 tablespoons Chili powder
1 1/2 teaspoon Black pepper
2 teaspoons Salt
2 cups Water

Directions:

Brown the beef and drain the fat off. Crumble the cooked beef into pea size pieces. In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat. Cook stirring every 15 minutes for 2-3 hours.

1.5 lbs ground beef
1 onion, minced (about 1 cup)
1 Tbsp jalapeno, seeded and diced
3 garlic cloves, minced
5-6 Tbsp chili powder (split in half)
*I use dried anaheim, ancho and chipotle peppers seeded and freshly ground, but store bought powder will do
3 Tbsp cumin (split in half)
2 tsp paprika (split in half)
1 15-oz can peeled diced tomatoes
1 8-oz can tomato sauce
1 15-oz can kidney beans, drained
1 cup water or stock
1 Tbsp vinegar
1 bay leaf
salt to taste (1-2 tsp)
1 tsp dried oregano
1/4 tsp cayenne pepper

Brown ground beef in a dutch oven or stock pot over medium heat. Remove beef from pot and drain excess fat.
Add onion, jalapeno, and garlic to the pot; saute for about three minutes.
Add the half of the spices (chili powder, cumin, and paprika) and let toast for 30 seconds.
Return the beef to the pot and add rest of the ingredients (except the remaining half of the chili powder, cumin, and paprika) and simmer for 1 hour, stirring occasionally.
Add remaining half of spices in the last 5 minutes.

I like cheddar cheese, green onions, and pickled jalapenos thrown on top of mine.

2 tablespoons olive oil
1 diced sweet onion
3 finely diced cloves of garlic
4 diced jalapenos
1.5-ish lbs. stewing beef cuts
1 lbs. lean ground beef
1 can Hunt's Seasoned Diced Tomato Sauce For Chili
1 small can Hunt's Tomato Paste
1 can Ro-Tel Diced Tomatos and Green Chilis
1 can beef broth
2/3-3/4 large bottle of Yuengling Lager
3 cans light red kidney beans

approx:
2 tablespoons cumin
1.5 tablespoons coriander
1.5 tablespoons hot chili powder
1 tablespoon baking cocoa
1-2 tablespoons salt & pepper
3 tablespoons brown sugar
plop of chili sauce
1-2 dozen blurps of louisiana hot sauce (i put in a good bit because the sound it was making was funny)
lil bit of fajita seasoning

* heat the oil, throw the onions and meats into the pot and start cooking them
* keep cooking until most of the liquid is boiled off/rendered down
* throw in the diced garlic and jalapenos
* dump on the broth, beer, tomato stuff, 2 cans of the beans, and seasonings
* simmer for 1.5 hours
* taste, add seasoning if needed
* dump in last can of beans, blurp in some more hot sauce, simmer for approx. another hour (this tenderizes the stew beef even more and boils off the beer smell)
* holy shit it's done i hope you have a clean bowl and spoon
* om nom nom

and that's about the gist of it

i filled up my large pot with this (12"R x 7"H) so i'd say it makes a good bit

i'll probably make it hotter next time

it's called for in several of my recipes, but I've never tried it. I am not big on chocolate anyway, as I have a minor food allergy to it, so to leave it out means nothing to me

I'll just use an extra stout-y beer in the mix to compensate (I actually looked for a chocolate beer the last time, but couldn't find one that I was happy with)

next time i make chili i'm going super light on the beans... it's like mustard gas up in that piece when i have a lot of beans.

made some with 1 lb ground beef, 1 lb neese's hot sausage, and about 2 lbs of deer meat cut up into little cubes

I make mine with beer, onions, kidney beans, and cocoa powder...plus obviously ground beef, tomato sauce, and spices (just use the Carroll Shelby box).
