Shadowrunner pegged me. Salmon is a waste of fish. The only way i have learned to appreciate salmon is in a cured form, preferrably a citrus cure. As far a cooked salmon goes, i hav only found it tolerable by putting it over a saute of green peas, red onions, grape tomatoes, and bacon... with a whole grain mustard vinaigrette to finish it. Otherwise, even the freshest salmon smells and tastes fishy to me. Salmon is the chicken caesar of fish.

* 2 teaspoons minced peeled fresh ginger * 1 teaspoon curry powder * 2 (6 ounces) pieces center-cut salmon fillet with skin, patted dry * 1 tablespoon olive oil * 3 scallions, chopped Stir together ginger and curry and season with salt and pepper. Pat spice mixture onto flesh sides of salmon. Heat oil in a nonstick skillet over moderate heat until hot but not smoking, then cook salmon, skin sides down, covered, 5 minutes. Turn salmon over and cook, covered, until just cooked through, about 2 minutes more.Add scallions to skillet with salmon and cook 30 seconds. Had something similar in Vietnam and it was tasty.

When I was in Victoria, BC I ordered a Salmon with Basil-Teryaki on it. It was the most delicious thing I've ever had, I would highly recommend you find out how to make it.

crushed almonds mixed with bread crumbs... soak the salmon in milk for a few seconds, bread the salmon then bake itnom nom nom!!

2 parts paprika, 1 part chili powder, 1 part salt and pepper, 1/2 part brown sugar, 1/2 part cumin to rub one side of filet. grill spiced side down first. after flipping drizzle a little maple syrup (real, the fake stuff doesn't work well) on the spiced side. finish grilling.[Edited on July 17, 2009 at 8:19 AM. This is my go-to salmon recipe, although I generally just wing it on the measurements. I also use lemon juice and pepper instead of lemon pepper, and I use maple syrup (in a lesser quantity) instead of brown sugar. I've done both on the grill and in the pouch. I just sauté it in ghee and add salt and pepper most of the time. I try to make sure one side cooks until some nice crisply flakes coat the top of the filet. Grilling is great too though.[Edited on May 16, 2014 at 11:42 AM. Reason : l]

I like the horseradish mustard approach. Occasionally I'll use a Soy/Honey/Ginger glaze as well
