the texture doesn't have to be soggy. if you make sure to get most of the water out, fried tofu is crispy and takes on a pretty golden brown color

the key is to use extra firm and press itI find that freezing it first then pressing it several times gives me my preferred texturemarinated for 20-40 minutes is the best way to infuse it with flavorI find that longer than that makes it mushy

I like the grocery store-type tofu once it's been frozen, but I bought some from Grand Asia Market once and froze it, and it was literally like a kitchen sponge when I thawed it.
