I'm not concerned with contests, it's just further evidence that what my taste buds tell me is correct. Pouring vinegar on some pork doesn't taste as good as barbecued brisket, or the barbecue they make in memphis or KC.

No, I actually prefer Texas style brisket, Memphis style, KC barbecue, St. Louis barbecue, and Western NC style to Eastern NC style. It's literally my least favorite kind of barbecue.

in my mind other bbq styles shouldnt really be compared to nc bbqit's called the same thing but they're so drastically different it's impossible to qualitatively compare IMO, the qualities of each can be appreciated, but if you're going to compare, it's less of a trivial exercise then to compare the subsects of "BBQ" where the basic properties are similar to provide a true test.

^^^ Kurtis, all of the BBQ styles you have mentioned are much safer, much more "normal", perhaps more immediately enjoyable. However, Eastern-style NC BBQ is a craft and something that requires much more skill to make correctly and a much more exquisite palate to enjoy. Anyone can enjoy some ribs or brisket or chicken slathered with sauce. I think this is why Eastern-style NC BBQ is often over-shadowed in contests by the "safer" (but much more pedestrian) varieties. The taste for vinegar-based pork is something that takes more time to cultivate, but once you have, it's really hard to appreciate the other varieties.Also, there is pretty firm evidence to support our variety as being the original BBQ in the Americas.[Edited on November 4, 2007 at 2:34 PM.
