yeah that's what i did when i had a gas rangenow that i'm down with electric it's a bit more of a pain in the assi use a glass baking dish, broiler on, door cracked (so the oven doesn't regulate the temperature), rotate when blackeningbut the totally crucial part is to immediately throw them into a bowl after they're donne getting charred, then immediately cover with aluminum foil and allowed to cool in their own steam baththe skin and shit basically slides right off, and they get a good texture

yeah, usually if i need some for a recipe make a batch then keep slices in olive oil for sammiches later you should try this pizza sauce i made last night... banginroast 2 red pepperssaute 4 garlic cloves, 1 large spanish white onion, both chopped in olive oilafter they're sufficiently soft, put in the red peps, choppedpuree 16 oz of canned whole plum tomatoes, add into the mixture, cook to thicken, then throw it into the food processor till smoothgahdamn

sounds yummykinda how you do a coulis...roast the peppers and while they're sweating saute some onions and garlic then throw it all in the food processor with some salt n white pepper to taste.
