The cupcakes themselves were ok but not a rich moist texture I was hoping for. The cream cheese icing completely made up for that though, and it ended up as a nice balance.I think I'm going to make cupcakes for my birthday, (I'm just doing a very small shindig at my apartment, my 21st will be a lot more exciting) and I want to core them and fill them with ice cream. Does anyone have suggestions for doing so?Also, fuck, I forgot to get powdered sugar when I went to the store. And I don't have a coffee grinder to turn it into powdered sugar on my own.Sigh.

Gumbo:4 chicken thighs3 links andouille sausage1/2 lb bacon2 green peppers (seeded, diced)2 small vidalia onions, diced1/2 head celery, diced4 cloves garlic, minced1 habanero pepper (seeded)2 serrano peppers (seeded)1/2 lb okra (sliced)1 qt beef broth1.5 qt water1 cup canola oil2 cups flourSeasoning: ground cayenne, thyme, oregano, paprika, garlic powder, salt, chipotle tabascoChop bacon into small pieces, crisp over medium heat in a large, thick bottom pot or dutch oven. Remove bacon from pot and set aside the rendered fat.Brown chicken thighs over medium-high heat, lower heat to allow fat to render from the chicken skin. Remove chicken and add rendered fat to bacon fat.Slice the sausage into discs and brown. Remove sausage and add rendered fat to chicken and bacon fats.Remove skin from chicken thighs and either discard (booo) or fry it until crisp in the combined fats of bacon, sausage, and chicken (YAAAY!) and chop them up into small pieces. Remove and set aside with the rest of the meats.Combine the rendered fats and canola oil and, once hot, add the flour. Stir constantly at first and then every 30 seconds or so, cooking the roux to a milk chocolate color. At this point, add in the peppers (and chilis), celery, and onions and let cook in the roux for about 5 minutes, stirring often (you can still burn your roux here). Add in the garlic and let cook for a couple of minutes, stirring often again.Begin to slowly add in your beef stock and water, mixing thoroughly as to create a smooth sauce with no lumps. Add enough that the sauce is thinner than your want the end product to be. Add the okra (this will thicken the sauce some, as will the simmering later). Return the sausage and chicken to the mix and let simmer for an hour or so before removing the chicken, deboning the thighs, and chopping the meat to bite sized pieces. You can put the bones back into the pot to continue adding flavor. Near the end, add the bacon pieces back along with the chopped up chicken skin. Continue to let simmer, adjusting the thickness as you go. Adjust seasoning at the end and serve over rice or with good bread.[Edited on September 6, 2011 at 1:54 PM. Reason : MEATS!]

Tonight I butchered a whole beef heart (took a while to get all the bits cleaned and soaked in saltwater) and had grilled beef heart with golden beet salad and brown rice. Was pretty awesome.I also made a heart sandwich for lunch.
