I'm surprising Brett with a little crock pot action since I got off work early today. Today's meal is creamy Italian chicken. Will post recipe once I'm not on my phone....and if it turns out well Also have some garlic bread and a fruit and walnut salad to have with it.

Ok, it was delish!!!Ingredients:4 boneless skinless chicken breast halves1 envelope Italian salad dressing mix1/3 cup water1 package (8 ozs.) cream cheese, softened1 can (10 3/4 ozs.) condensed cream of chicken soup, undiluted1 can (4 ozs.) mushroom stems and pieces, drainedHot cooked rice or noodlesPreparation:Place the chicken breast halves in a slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on LOW for 3 hours. In a small mixing bowl, whisk together cream cheese and soup until blended. Stir in mushrooms. Pour cream cheese mixture over chicken. Cook 1 to 3 hours longer or until chicken juices run clear. Serve Italian chicken with rice or hot cooked noodles. Except Brett doesn't like mushrooms, so I substituted Broccoli instead. Pretty damn tasty

going to try a new crock pot recipe tomorrow night (for sunday football):The Meat 1 lb sirloin steak, cubed bite-size 4 slices bacon (or 3 Tbsp vegetable oil) 1 lb chorizo sausage (or ground pork)The Aromatics 2 medium onions, chopped 1 bell pepper, seeded and chopped 2 celery ribs, chopped 4 garlic cloves, smashedThe Other Good Stuff 1 (4 ounce) can diced green chilies 2 (16 ounce) cans kidney beans, drained and rinsed 1 (16 ounce) can corn (optional) 1 (16 ounce) bottle dark beer or 1 (16 ounce) bottle ale 1 (28 ounce) can chopped tomatoesCowboy Steak Seasoning 3 tablespoons chili powder 1 tablespoon coffee beans, dark freshly finely ground 1 tablespoon paprika 1 tablespoon ground cumin 1 tablespoon brown sugar 1/2 teaspoon salt 1/2 teaspoon dry mustard 1/2 teaspoon ground coriander 1/2 teaspoon fresh ground black pepper 1/4 teaspoon cayenne (or to taste)Directions: 1 Turn the crock pot on to high. 2 Prepare the Cowboy Steak Seasoning 3 Roll cubed steak around in the seasoning mix until they are thoroughly coated. 4 In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp. 5 Remove and drain on paper towels or clean newspaper, reserving the drippings. 6 Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary. 7 Transfer browned steak to the crock pot. 8 Add the chorizo or pork and cook it down, stirring, for about 5 minutes. 9 Transfer the chorizo or pork to the crock pot. 10 Add all the “aromatics” to the fry pan and sweat them down, stirring frequently, about 5 minutes. 11 Transfer them to the crock pot. 12 Stir in all the “other good stuff” and the reserved bacon to the crock pot. 13 If there’s not enough liquid to cover, add some beef stock or more beer. Put the lid on. 14 Let the mixture come to a simmer, taste and adjust the seasoning to taste and let it simmer at least another hour.

so my korean BBQ short ribs were alright, not nearly as tasty as I would have liked. also, i was supposed to remove the meat and let cool and slice into bite size pieces before the final step. But the short ribs turned almost into roast, just pulling apart into shavings rather than being able to slice into strips/pieces. was this a result of being in the cooker too long or a result of the meat?

Greek yogurt is a good substitute for things like sour cream and mayo, but I wouldn't use it for cream cheese. And I also wouldn't try it in a crock pot. I think I'm going to make a portobello mushroom soup in mine this evening.

I say screw the nutritional facts, try that recipe as it was written- that on top of some pasta was freaking awesomealso, the chili recipe I posted- AMAZING!!! I took out the coffee and celery, and used an orange pepper, and couple different spices, a spicy sausage with it- it was awesome. The only thing I might do different is figure out some way to make it thicker (some sort of flour or something? i dunno...). Oh, and for the beer, I used 1 12oz Sam Adams October fest, and 1/2 a 12oz New Castle

Aww, I was going to ask how the coffee was. I always see that listed as a chili ingredient but I've been too much of a wuss to try it yet. I'd use masa to thicken it.

^^that seems to be a common trick that surprisingly a lot of people don't realize... a lot of the chili's and stuff I make do end up "soupy" but for the last hour I'll just crank up the heat, and toss the top on sideways, and then turn it on warm and it will thicken right up!

If you have them, I'd recommend adding cumin and some other kinds of pepper to that recipe.Biofreak70 posted a pretty special chili recipe further up the page, and you could use some of those ingredients to enhance your own chili.

I saw his recipe and although it sounds delish, its more work than I wanted to do right now I added in a can of diced tomatoes with green chilies and used a chili powder blend which has cumin in it. I also added in some fresh oregano from the garden. Next time, when I have more time I wont use a pre-made chili powder blend. I'll use fresh ingredients instead. Also in a week or so I'll have some hot peppers from the garden I can use instead of the canned green chilies.

I was at Whole Foods the other day and they were giving out samples of this jerk sauce made in Raleigh:It is ridiculously tasty.So today I put a whole chicken chopped up into parts and some assorted mushrooms in the crock pot with a bunch of the jerk sauce, let it marinate overnight, and now it's cooking. Can't wait to go home and eat it.
