i need to start this off by telling everyone i have a major disdain for casseroles. like major. hate them. they are gross. etc.

BUT OMG i am babysitting and had the yummiest casserole for dinner!!!!

chicken and rice salsa verde garnished with cilantro and diced tomatoes. omnomnom. i wonder how bad it is for you. prob bad because it is topped with delicious melty cheese.

i'm going to ask for the recipe. i think if i make it i might add some fresh jalapenos and/or a can of black beans. but basically, from what i can tell, it is shredded chicken, rice, and a jar of salsa verde. then topped with melted monterey jack cheese. then after it comes out of the oven, you garnish the top with diced tomatoes and fresh cilantro. i don't know if the jalapenos would do better as a garnish with the tomatoes (kinda like a pico type deal) OR in the casserole.

anyway

it was good. A++ will eat again.

That does sound really good. But I also love casseroles.

I had lemon caper chicken, broccoli slaw and a little leftover rice blend with peas in it.

i don't know what my aversion to casseroles is. well actually i do. a) i have never been a mix my food together sort of person. i would eat on a sectional plate if i could ahaha and b) after my mom died, we got like 9238742309384723894723093847 casseroles. like so many. and they were all like 15lbs. and then again when my grandmother died. i've been a year casserole free so i think my dislike of casseroles is slowly subsiding

but i will post the recipe when i get it. i would definitely not mind a little more kick to it but that is an easy fix. it was good and kid friendly (though if you make it spicy or throw beans it it prob becomes less kid friendly lol - the kids ate it without the tomatoes and cilantro, not surprisingly). i am going to the beach later this week with my family and will prob make this to bring with so there is something edible (my aunt likes to make casseroles...they are disgusting...prob another reason i am scurred of them haha).

when i was little i was convinced that the mushrooms in cream of mushroom soup (casserole staple) were fish eyes.

I am seriously hoping my kids get used to spicy foods in utero, because if they can't handle it and I have to make everything mild, that is not going to work out very well.

Sautéed Bacon wrapped Scallops with Rosemary & Lemon

1 pound of fresh or frozen scallops 
2 tablespoons extra virgin olive oil
1 clove garlic, peeled and sliced
3/4 teaspoon dried rosemary
salt and freshly ground pepper
1 tablespoon lemon juice

Put the oil and the garlic in a frying pan and cook the garlic until golden. Add the rosemary, scallops, salt and pepper and cook over a high heat until they are cooked, about 2-3 minutes.  Add the lemon juice and turn up the heat for a few seconds.  Serve hot.



I used fresh picked Rosemary from the garden.

i'm making a take n bake from whole foods typical typical

and while i was there i got some ciao bella raspberry sorbet which i plan on eating topped with fresh eastern NC blueberries omnom

and holy shit ciao bella is $texas there

shredded chicken bbq sammiches from the slow cooker

i hope they turn out well

i made my own eastern NC style bbq sauce haha. we will see. lots of vinegar, pepper and a lil brown sugar up in there up in there

it smelled and tasted good anyway

and baked beans and tater tots. or mac n cheese and tater tots

#sohealthy

sandwiches on toasted potato buns, duh.

My husband fixed our neighbor's computer a couple of days ago. This afternoon she called to let me know that I shouldn't plan on cooking dinner and brought a pot of vegetable soup over. They have a large garden and lots of the veggies are fresh. It's very yummy.
