filet mignon, grilled corn, and caprese salad. Love cooking out with my sister!

Oh, and Chatham Hill Cherry Berry wine for an after dinner drink.

I made today's. It wasn't too typical Greek, I don't think. Tomato juice, lemon juice, olive oil, oregano, garlic, salt & pepper.

^

2 tbsp mayo
1 tbsp soy sauce
Juice of one lemon
1-inch cube of ginger, peeled and finely grated
2 garlic cloves, peeled and finely grated
1/2 bunch scallions, thinly sliced

Whisk it all together and toss with the tilapia. Broil the tilapia for about 6 minutes.

Next time, I'll probably add a little less lemon juice and add the scallions after the tilapia come out of the oven.

[Edited on July 31, 2011 at 9:24 PM. Reason : that's enough for 3-4 fillets (a pound-ish)]

^^ yeah that much cholesterol is a concern, but remember blood cholesterol is mainly affected by how much saturated fat you eat, not how much cholesterol you eat.

and anyway, even if that much cholesterol was bad for you, eating it once in a while is fine, as i do.

it is a highly nutritious food high in many vitamins/minerals, and extremely high in omega-3 fats.

Making Beef Stew right now. Wish I had a pressure cooker and it'd be done in 45 minutes instead of 2.5 hours. But it's totally worth it!

And possibly making peach and blueberry cobbler with peaches from the farmers market If not tonight, then sometime this week!
