My fave is basically a combination of pit style and western NC sauce. Kyle Fletchers is probably my favorite, but I would rather avoid Gastonia at all cost.

my preference is definitely eastern. A good balance between spice, sweet, and tang from the vinegar is magic for the mouth.... but real talk anything that doesn't involve mustard-based sauce I'm down with. Kansas city. Texas. All of it.You can drench it in tomato paste, brown sugar, mustard, and vinegar...and if it's somehow still too dry, I'll just mix it with mayonnaisey coleslaw and eat it on a butter-soaked bun.I'm so hungry right now.

Bbq, of any style, can be delicious! My preference is for eastern because that’s what I grew up on. I’m deeply biased. I accept all forms of bbq, from all regions, and I will not turn my nose up at delicious smoked meats nor will I turn my nose up at various sauces that go on or with the smoked meats. All styles can be delicious!

I enjoy both with a preference for eastern style, but I do like a little tomato flavor.When I make my own sauce it's basically half and half eastern and western. I put in some ketchup but not as much as western style.Plus since western style is traditionally pork butt and eastern style is whole hog, it's easier to do western style in a small smoker[Edited on March 29, 2019 at 10:41 PM. alabama white sauce is okay on chicken or fries (not as good as japanese white sauce tho), but i can't get with putting it on pork.(and alabama white sauce isn't vinegar based, it just has vinegar in it. same with SC mustard sauce, it's not vinegar based it just has vinegar in it)[Edited on April 17, 2019 at 8:43 AM. In a pedantic way, SC Mustard is vinegar based bc yellow mustard itself is vinegar based. The first ingredient in yellow mustard is vinegar. Sorry, my SC buddy will talk about how vinegar shouldnt go on bbq bc it's for cleaning so I have to make sure to point out mustard ingredient list to him (and yes I know it has ADDITIONAL vinegar but still)

mustard also only has vinegar in it, it is not vinegar basedneither alabama white sauce or SC mustard saucer are vinegar based, they are sauces that contain vinegar. this is different from eastern nc and lexington style sauces which are both vinegar based.

Based on ingredients list, store bough yellow mustard is basically mustard seed flavored vinegar. SC Mustard sauce generally has more vinegar than mustard seed. So vinegar based vs sauce with vinegar is just semantics.

I like going to bbq restaurants that have multiple sauces on the table, and i try several of the sauces, because i like different things.I also like a good steak. But sometimes I'll eat my cow meat in the form of a tasty hamburger, which i also enjoy. Sometimes I put mayonaise on it. Sometimes mustard. Sometimes both. But I usually just get it with lettuce, onions and tomatoes, and no condiment. And slaw if they have it. And sometimes i like my cow meat in the form of ground meat balls, served over pasta with tomato sauce. I've even had my cow meat raw a few times recently, with asian flavors. I think they called it Thai Steak Tartare. In conclusion, i like food served up different ways, with different sauces and different flavors at different times.
