A co-worker gave me a ghost pepper from his garden, and I plan to make a hot sauce out of it. I will let you all know how this goes.

If the sauce turns out well, I will ship a bottle to one of you TWWers whom I adore.

I recently cut and removed seeds while making chili sauce, without gloves. My hands were on fire for over 24 hours, no matter how many times I washed them.

I've been growing ghost peppers for a few years now. I've found the best thing to do with them is dry them out and grind them up into powder to sprinkle into chili/sauces/etc. The first time I cut them up I got a little chunk of the chili under my fingernail and it burned for three days straight.

I definitely plan to wear gloves when handling this bad boy, and will also do cooking outside on my grill's side burner

I dry mine out, smoke them, and put them in a pepper grinder.

How do yall dry them? I've got a cheap dehydrator but haven't tried peppers in it.

Recently I tried to dry chili peppers by putting them in the oven, heating it to about 200, turning it off and letting it sit for a couple hours, then repeating. It worked alright.

I use the Alton Brown method for everything from jerky to herbs to fruits and veg. It seems kind of extra, and it is, but I can't argue with the results.

Most dehydrators aren't drying so much as cooking at a really low/slow temp.

Peppers I usually thread them onto a string with e needle through the stem and just leave them hanging somewhere inside the house.

Ive got a ronco dehydrator that does meats and fruits really well.

I don't dry herbs.

I have a dehydrator that gets them dry enough to crush in your fingertips. Anytime I just tried to air dry them they would get moldy. I guess it is just too humid here.
