The cheaper and shittier a restaurant is the more likely they are to have "secret ingredients"The better places show you exactly how they make stuff and basically dare you to try to replicate it.

i really like these kinda of shows. and i don't really know why. the restaurants are very likely restaurants i'll never go to in my life. the dishes i would never try to make myself based off these shows (for that, i really like cooking shows). it's just mindless entertainment, i guess. but, i too have noticed the same thing you mentioned. another thing i noticed, and this is probably a dumb observation but i've never worked in any kinda restaurant kitchen before, is that a lot of time they'll say "yeah this goes in at, like, 425 or so for 30-40 minutes". they make it sound very inexact - and i know cooking times obviously vary all the time. but i guess i just assumed it would be very precise. or they'll do similar things with ingredients. Standard cooking is generally by feel, there are so many variables that every time cooking the same thing could be a tad different Baking on the other hand, you have to do that shit exact every time

^i'm not opposed to going to those restaurants - but the odds of me traveling to that particular city and visiting that particular restaurant are low.

Other than some of the places around Raleigh that I've seen on these shows, only one I've ever been to was in Boulder City Nevada when I ate at a place that was on Diners Driveins and Dives. I wish Raleigh had one of those super unique places, or a place that had a super unique offering (like a giant Dagwood sandwich or something). Although we have a great food scene, everything is kind of run of the mill. You would think the Hillsborough St. area would have something. Also, Guy Fieri really annoys me.
