Marinade sounds good. However, if it was overnight and pineapple juice was involved, I'm surprised you had anything that would hold together when you were done. That stuff is a pretty potent tenderizer.

It is no where near as strong as pure bromelaine. It is just strong enough to penetrate just enough to help the marinade get into the meat a little better, depending on the ratio of it to the other ingredients. Papain is also a great meat tenderizer, but we use it i the lab and it literally smells like athlete's foot.And any 100% pineapple juiceAnd then in end when you baste them make a 50/50 of this marinade(the marinade also contains the Korean BBQ sauce as well) and Korean BBQ sauce and there you go!/[Edited on June 8, 2014 at 11:31 AM. i've had a lot of success cooking ribs in the oven. wrap 'em in foil and leave them in there for 5 or 6 hours at really low heat.when they're almost done, you can unwrap the foil and cook them for 10-15 minutes at about 350 degrees if you want a little crisp to them.

i like to do picnic shoulders sometimes instead of boston butts just because you get some skin with them. after it's done, i take the skin off and lay it on my gas grill and let it get crispy.
