Mr. Beethoven makes incredible grilled cheese sandwiches. I think it's the real butter they are drowned in first.[Edited on April 14, 2012 at 9:24 PM. Reason : ^Dammit, I wouldn't have posted in this thread had that been in here first.]

use real cheese, fresh basil, add ham (not cold cut) and grilled onions. but then you have real melt and not some 5yr old's grilled cheese.
4/14/2012 9:28:39 PM
I make it with heat.
4/14/2012 9:30:45 PM

When I was little and I couldn't use the stove/skillet to make a grilled cheese sandwhich, I would toast my bread and butter them religiously. Then I would assemble the sandwhich with 2 slices of kraft sliced cheese and microwave each side for 11 seconds. Yum!
4/14/2012 9:37:55 PM
throw an unhealthy amount of butter on the skillet place cheddar between bread grill that shit adding more butter if the first side soaks up too much of italso i like to dip mine in tomato soup with a good layer of black pepper on top of it
4/14/2012 9:41:49 PM
Real cheddar cheese with very thinly granny Smith apple in the griddle with a little butter. the husband uses the toast and processed American microwave method.

This is one of those food items where I describe it as a "it's your world" type of thing.Just put in there what you like. You have the basics down. Two slices of buttered bread put in a pan with cheese. Flip until done.Given that, you can add in what you want.Depends on what you like.Basic shit is going to be meats:Bacon, pepperoni, bologna, pastrami. Basically any thin sliced meats. You can melt from there and be ok, or spice it up a bit.Throw in some mushrooms, or tomato, or some lettuce.Popular way is a melted BLT. An already cooked egg added in is good too.A bacon egg and cheese sandwich is just a grilled cheese with bacon and egg.The trick is, to get your mind to learn what goes good together. You want to take a basic idea....the grilled cheese, and make it your own.Throw whatever you like in, as long as its what you like.Like bacon, tuna, cheese, tomato?Grilled cheese with bacon tomato and tuna.It really is YOUR WORLD.A favorite of mine is:A grilled cheese with swiss, american, pepperjack with ham, bacon, avocado. Wanna really get crazy, when you put the butter in the pan to get it done, throw down some grated cheese and melt/crisp it into the side of the bread.Fucking $ Grilled Cheese is basically one of those things you can do whatever the hell you want to it and its going to be awesome as long as you have some basic idea what you are doing and aren't a total fucking idiot.

4/14/2012 10:16:52 PM

1) heat up pan2) spread a bit of mayonaise and a small amount of mustard on one side of two slices of bread3) melt a generous amount of butter in pan4) mop up butter with the dry side of one of the slices of bread5) add a generous amount of cheese to bread (I usually prefer extra sharp white cheddar)6) place the other slice of bread condiment side down on the cheese7) when the bottom slice of bread is golden brown, take the sandwich out with a spatula8) add more butter to the pan9) flip the uncooked side of the sandwich down and mop up that butter10) cook until that side is golden brownserve with tomato soup and a glass of whole milk
4/14/2012 11:08:12 PM
Slap two slices of Kraft between a couple pieces of bread.Microwave it for 19 seconds.Eat that shit up.
4/14/2012 11:09:06 PM
1) Go to The Borough.2) Order a grilled cheese.3) Eat grilled cheese.4) Profit?!?
4/14/2012 11:09:48 PM
Get some nice thick pieces of sliced bread, butter both sides. Brown the bread slightly first and then add in any sliced cheese you want, more the merrier (muenster, provolone, Cheddar, American, Monterrey jack, Colby, Brie, Havarti) And in the middle put a few slices of bacon cooked from earlier and cook till the cheeses start to ooze. Enjoy.

i'm drinking some beers and eating some grilled cheese sandwiches (old skool style) while reading this thread.
4/14/2012 11:52:48 PM
A Foreman grill makes one hell of a good and consistent frilled cheese. If you don't mind the grill press marks.
4/15/2012 12:07:11 AM
btw "frilled cheeses" are the next big thing.
4/15/2012 12:12:43 AM
Isn't it better to pre-butter the bread to ensure consistent butter coverage?
4/15/2012 12:46:03 AM
Has anyone discussed massaging the butter into the bread?[Edited on April 15, 2012 at 12:49 AM. Reason : to ensure coverage, yadig?]
4/15/2012 12:48:14 AM
If you want to do it right and not use a ton of butter, melt the butter in the microwave beforehand. Take the melted butter and spread it across one side of each piece of bread. This is a lot easier than trying to take cold butter to get the even spread.
4/15/2012 1:10:59 AM
Fuck a tomato

some cheese do not melt well. Choosing right cheese is important
4/15/2012 4:51:20 AM
^ true. (when i said use any cheese you like, i kind of implied that it has to be the melting type, such as cheddar)also, the bread you use can also make a big difference.
4/15/2012 4:54:29 AM
well i suggested brioche. nice and dense. and the balance of sweet and salty don't require a sprinkle of sugar on top what kind of bread so you suggest?
4/15/2012 4:56:55 AM
sprinkle of sugar on top, and the apple suggestion, both seem weird to me.i use sliced bread most of the time, but it has to be dense, hearty, and grainy (the exact opposite of gummy white bread). once in a while i use a whole wheat baguette, but you gotta grill it inside a grill for a while, and also press down on the grill to compress the baguette.pita bread also makes a heavenly one, like a quesadilla
4/15/2012 5:05:14 AM
there is really only a couple variations of grilled cheese (w/ mayo or w/o, buttered up or not, and what cheese and bread choices you make)all yall are just coming in here and posting hot sammiches you like to make that involve cheese and either grilling or pressing. Don't over think it- a grilled cheese is exactly that- a grilled cheese. Although, I have a feeling this is what the OP wanted, so he should have gone "what hot cheese sammiches do you like?"
4/15/2012 6:36:58 AM
The one I posted is purer than many others in this thread (mine has tomato and onion, others are putting meats/chicken/tuna).But even if that is not pure enough, go with just cheese.
4/15/2012 6:41:34 AM
yeah, once you start adding other things, they become the namesake/focus of the sammich. Onions and tomato are kinda tricky though, as I consider them an add-on just as much as cheese.
