Just got some Krave Chili Lime beef jerky and OMG is it good . I love jerky of all kinds. Bison, ostrich, venison, beef, turkey, and pork are the ones I can think of that I've tried.

What is your favorite jerky? What's the weirdest jerky you've ever had? How hard is it to make at home? Recipe? Do I need a dehydrator? Best cuts of meat?

I love the fuck out of some jerky. Beef and turkey are both good, I've never had any jerky I didn't like.

I've thought about making my own. It looks like you can get a dehydrator on Amazon for pretty cheap.

Costco sells big bags of jerky/steak strips. I got some large bags at 8 bucks a pop - way better deal than anything you'd find at the grocery store.

I enjoy jerky and eat it all the time, but I've never understood the dude hype behind it.
Then again, people who eat bacon 10 times a year act like it's a god among foods.

I eat jerky many times a week.

It's tasty, it's high in protein, and it's low calorie. There isn't a more convenient and more delicious snack, in my opinion.

I love jerky

My family used to go to Mammouth Mountain in CA a lot and we'd stop at Mahogany Smoked Meats every time.

So one of our wedding presents was a dehydrator- I asked for it because I want to make my own jerky. I have no idea how to do it, so lets get some recipes in here folks!

Idk, I probably only eat bacon that much. (unless you count bacon cheeseburgers and shit)

I don't enjoy bacon enough to cook it that often. Sausage > bacon

My favorite that got me into jerky was Cabella's ham jerky. It was amazing, it was a big bag and a gift from a friend who got them on mark down. I can't bring myself to pay as much as they sell for.

It's actually very simple to make at home. Yes, you need a dehydrator unless there is another method I am unaware of. My dad makes it and uses cheaper cuts of meat - london broil, flank steak, or even just those pre-diced beef tips for stew (these have become his new favorite because he just tosses them in the dehydrator with very little prep). dehydrators are really cheap at walmart and you basically marinate the meat and toss it in for a few hours. the dh has layers so you can put the smaller pieces in the bottom layers and larger pieces towards the top so it cooks evenly. can take anywhere from a couple hours to 8 hours depending on how thick you make it. the thinner the better to me but my dad disagrees.

My friend got a nice venison tenderloin and we made jerky out of it, it was good. when I have him make it for me I always ask him to marinate it in teriyaki and brown sugar for a day or more. I really like a strong teriyaki flavor (I put that shit on everything, it's my favorite sauce for any meat) and I like it to be chewy.

best jerky I've ever had I got at the gun show when it came around. there is also a guy that sells it at the flea market in that long building. it's kind of pricy, but very very good. It's cut thin into "bark" and is chewy.

Where do you folks buy your jerky? I feel like the stuff they sell at the supermarket is probably not the best out there and overpriced unless on sale.

Although I bought some Bone Suckin' Sauce jerky on a whim at The Meat House and that shit was pretty damn good.

There is (or at least was) a standalone jerky store by concord mills, and a friend of mine got some for us as part of our groomsmen gifts- that shit was awesome!

now here is my n00b moment of today: you don't cook the meat before dehydrating it, do you? and how long should you expect homemade jerky to be good for?

when I was asking for some recipes, I really need a step by step guide because I'm a jerky jerk

I am going to buy a dehydrator tonight. wolfpackgrrr, I bought some Bone Suckin' Sauce jerky at Southern Season and was very disappointed. You guys should really try Krave jerky. It is the moistest and most flavorful I have had in a long time. You can either buy it online or at One World Market.

Gonna try this one:

Chipotle Lime Jerky

1 tsp. salt
1/4 tsp. ground black pepper
1 tsp. chipotle powder
1/2 tsp. garlic powder
1/2 tsp. dried oregano, crushed
1 tsp. paprika
1/4 tsp. ground cumin
1 tsp. lime juice
1 lb. lean beef (see note above)

For each recipe, combine all the ingredients except the beef. Slice the beef so it is approximately 1/4? thick then into strips about 1 1/2? wide. Toss the beef in to the marinade and mix to coat. Because the Chipotle marinade is more of a paste you will really need to work at getting it distributed evenly. Tightly cover and allow to marinate for 10-12 hours in the refrigerator, stirring it every few hours.

Drying time will be anywhere from 3 1/2 to 10 hours, depending on several factors, but if you made sure to cut your meat 1/4? thick it should take 3 1/2 – 5 hours. To test for doneness remove 1 piece of jerky and let it cool to room temperature. It should crack along the grain when bent but it shouldn’t break apart. When done remove to a cooling rack, blot off any excess fat that rendered out and allow to cool completely before packing it way.

I went to Walmart tonight in search of a dehydrator but they only had one model and it looked sketchy so I didn't buy it. I talked to my friend who makes his own jerky all the time and he told me he loves his NESCO FD75PR so I went on Amazon and ordered one. Dammit, I guess I'll have to wait a few days to try making my own jerky.

actually, you can make jerky without a dehydrator by setting your oven to low and placing the meat on skewers and hanging them off the top rack. you then keep your oven door propped open with a towel and in 6 hours, JERKY!

I've done this to dehydrate apples as well as make my own steak jerky

i'd be kind of worried about the temperatures involved with alton brown's method, seems like the perfect environment for bacteria to grow since it can take up to 12 hours and there is no way the temp is going to be outside the 40-170 range

First batch is in the dehydrator. I ended up using about 1.5 pounds of brisket and 2 pounds of some kind of roast. I sliced it pretty thin and marinated it for 24 hours. It smells delicious and I can't wait to see the final results.

My first attempt at jerky was a success!! It is tender and really flavorful. I went to Cliff's meat market today and had them slice up 5lbs of roast so that it will be more uniform because with the first batch that I sliced myself some pieces were more done than others. I am marinating this second batch in lime juice, Cholula hot sauce, a little soy sauce, and some garlic.

I finally got around to using the dehydrator I bought this past weekend. Got one of the large packs of ground beef at Costco. Took enough meat out for 4 burgers, was left with probably 5 lbs of meat. Mixed it with teriyaki sauce and some spices/cures that came with the dehydrator, let it work for 5-6 hours. Got a ton of jerky out of it:



And there was another bag of the same size that I already killed. This stuff tastes a lot better than your standard store-bought/gas station jerky. It's not even in the same league, really.

In terms of cost effectiveness, I'm not sure there's a better option for dollar/protein. Most of the fat is lost during the dehydration process, so you're left with lean protein.

I had springbok jerky once. It was from South Africa (bought it at Harrod's).

I have never made it, but seems like I will be making it soon after reading the oven method. I will definitely make lamb jerky to begin with. Anybody had that?

What about chicken/turkey jerky? Is that possible?

P.S. What cut of beef do you guys get to make it at home?

For those of you making your own jerky, the eye of round is a lean, inexpensive cut well suited to jerky. If you like buying, try Bama Boy Beef Jerky. Locally owned in Apex and they have hot or original. Good stuff!

wait- so I was reading through this thread and saw that you can do it with ground beef? what percentage do you get? 80/20? 93/7?
