give it to me! [plz]

I'm mainly looking which cut/% you like and the ingredients you throw in with the meat...and any other details on preparation or grilling you wish to include

I typically go with 85/15 sirloin or chuck, season with worcestershire sauce, pepper, garlic and kosher salt...form into patties loosely (not too firm), and use a spoon to push a hole in the middle of the patty so it doesn't bow up in the middle...but I'm sure I'm missing something here.

80/20 hamburger, no special cuts. Its gotta have fat to taste good. Stay away from ground beef in 90% lean category unless your butcher made it and you know where the meat came from. Ground beef less then 90% may have "pink slime" in it... nasty stuff.

To make the patties I'll add a little salt and 3 cloves of fresh crushed garlic. Mix it all up and let chill in the frig for 30-60 min. To shape the patties I have some silicon egg rings that are about 4-4.5 in across that i press the meat into. I do this for consistent shape and size and they don't puff when cooking. Cook on a grill, med rare.

How to top it off? Lately I have been making burgers based on what I can get in Korea from the street vendors.
Yellow cheese, an over easy fried egg (cooked in the egg ring), bacon and the kicker...

cooked on a cast iron skillet

preheat med-high 5 min, add 1T canola oil

drop ball of meat, seer 1 min, flip n smash, seer 1 min, flip, 1 min, flip, add cheese, medium burger

I like mine with lettuce and tomato. Heinz 57 and french fried potato. A big kosher pickle and a cold glass beer.

That's pretty much exactly what I do, except I don't always bother with salt.


Things I love on a burger in various combinations:

-avocado/guacamole
-pimento cheese
-sauteed onions
-bleu cheese
-mega painfully sharp cheddar
-fried onion rings
-dijon mustard/brown mustard

I second the cheese and burger society. I've been making burgers from that site for about 2 years now. My two favorites are the Firehouse and the Macho Nacho.

- 2 pieces of whole wheat bread with sesame seeds
- a thin layer/spread of avocado
- a thin slice of freshly organic tomato from my patio
- a small bit of organic fresh baby greens
- bronco bob's roasted mango chipotle sauce from Whole Foods
- 1 piece of cardboard
- 15 rusty nails
- blood from a rabid bat
- a dash of black pepper to seasoning

Hopefully you guys enjoy the sammich as much as I did when I was alive.

One of our favorites is a turkey gorgonzola burger. Ton's of flavor and a bit healthier. We usually make them into sliders.

Combine ground turkey, chopped Gorgonzola cheese, chopped sun-dried tomatoes, minced garlic and cumin powder. Top with shredded cabbage and bbq sauce (sweet baby ray's would be the correct choice).

i'd beat the shit out of someone for serving me a turkey burger

i'd like to add that every swinging dick around thinks he can make an awesome burger, but i've rarely had one outside of a restaurant that didn't absolutely suck. usually it's because they're way overcooked. i think mine are pretty good, but i don't cook them for anyone but me and my wife because "OMG, I CAN'T EAT THIS IT'S STILL PINK IN THE MIDDLE"
