The NYC tap water is brought in from upstate and it they don't use pumping or a concrete aqueduct so it absorbs the natural minerals from the ground.

a lot of people claim that the mineral content of NYC's tap water influences the taste of thingsI disagree because NYC has relatively soft water as compared to the rest of the country, however the old pipes here CAN change things so who knowswhat is really going on with the New York bagels is that they are made by some straight up Ashkenazi Jews the water that bagels are boiled in before they are baked can have additives like lye or honey which will change the taste of the bagelI really like the Pumpernickel bagel sandwich (with smoked salmon, cream cheese, tomato and onion) from Murray's Bagels at 13th and 6th Ave

bottled water isn't held to the same scrutiny that tap water is - I trust it less than the municipal stuffalso the chemicals leeching from that bottle aren't very appealing

^agreed. I was already weary of bottled water from an eco/trash standpoint...then I watched Flow and won't touch the stuff unless I absolutely have to. Outside of NY, the best bagel is in Greenville, NC @ Boulevard Bagel. All of my NY and Maryland relatives take a dozen or two home and they are the best tasting bagels that one will ever eat. You can even freeze them and defrost them overnight and they taste more fresh than Breugger's.

As a general rule, the place with the best bagel will be the place that's swamped a little before noon on a Saturday.Also, if there's a temple and a bagel shop nearby that has been open for a couple of years, chances are they make a pretty decent bagel.
