The problem with teaching myself how to cook was that I never had one of these, so now I don't really know what to do with one.

I can't figure out a way to say that without sounding retarded. I mean, I know how to use it ... it's a skillet ... but I just never got on the bandwagon.

I loved my MIL's cast iron pan so much that she bought me one this past Christmas. I love it! It's great for browning a roast and sliding it pan and all into the oven, then using the juices for a sauce or gravy.

I have 4 currently that I use in my cooking rotation

9" skillet that belonged to my grandma and is old as hell and smooooooth as silk.

12 deep skillet that I brought new a few years ago and its still being broken in

flat skillet, not sure what size it is. But it belonged to my other grandma. It was in pretty bad shape when I got it because it was in a box in the attic for 20 years. So I had to start over with that one, still being broken in

Square deep skillet that belonged to the same grandma as ^ and its in great shape.

I use an old Griswold every day. It took a while to get it re-seasoned but it cooks wonderfully. I also have a 15" I bought from Agri Supply but I've only used it a time or two.

Cast-iron is hokey shit. Yeah it works good for the one or two times you're going to use it, but:

You can't put it in the dishwasher because it will rust.
You can't scrub it really well because it will rust.
It's heavy as fuck and is a pain to store anywhere where the cabinet is below the level of my dick or above the level of my eyes.
It's ridiculously expensive unless you buy the unpainted shit, which then rusts.


Yeah, it has good heat spread but you can get the same effect with a copper core pan like this:

Oh yeah and copper core pans also don't burn your hand if you're dumb and touch the handle without a glove or rag between.

The reason you don't scrub is it to leave the seasoning (consequential non-stick coating built up over time) intact.

Seared Lamb

Seared lamb shoulder chop with sauteed onions and peppers on a bed of green lettuce. Everything prepared in my cast iron skillet. Also, cornbread, biscuits, and other bread items are great out of cast iron too.

cast iron is cheap as shit. water should not be sitting on your cast iron pan for and significant length of time, anyway, and you keep it seasoned anyway.

cast iron has its place...once it's been seasoned, it'll cook as well or better than the copper core stuff, but it costs magnitudes less

the copper core cookware is nice, don't get me wrong, but you pay THOUSANDS for a set that doesn't suck...for a quarter of the money, i have a nice set of anodized aluminum and a set of iron...i tend to use the iron when i'm doing meals where i'll want to cook multiple things in succession, since the pans stay hot for so long

I've never had cast iron rust -- I guess you just don't know what you're doing...

there's nothing wrong with cast iron cookware I suppose, but I've long held a preference for copper cookware

it's lighter, more aesthetically pleasing, and a superior conductor of heat

There are lots of kitchen accessories that cannot go into the dishwasher, rinse it off you lazy ass.

You can't scrub it really well because it will rust.

It's not meant to be "clean"

It's heavy as fuck and is a pain to store anywhere where the cabinet is below the level of my dick or above the level of my eyes.

Easy to prevent any issues with your cast-iron cookware by just seasoning it all over again and shoving it in the oven whenever you suspect it might need it, or when you've rinsed it off a bit too well. Mine has held up though I don't use it much and don't season it much (haven't had it terribly long either, maybe a couple years).

My cornbread is now a regular staple at thanksgiving. I love my cast iron skillet.

Also, dry the pan off right after you wash it and season it again for storage. It says to do this on the package. If your skillets are rusting or you're having difficulty with them, you're doing it wrong and/or are lazy.

1) If I can choose between two things that conduct the same amount of heat, but I can throw one in the dishwasher versus the other, which one do you think I'll pick? Yes, of course I'm a lazy ass. I don't think you should have to have that much maintenance just to keep your shit in working order.

2) See #1, obviously no one is thinking about carbon buildup on the bottom of the pan, or splatter from the pan, onto the burner which is then vaporized and put on the bottom of the pan. The amount of maintenance involved just to keep cast iron in working condition is too much imo.

3) Call me a pussy all you want. But I worked in a professional kitchen for 8 years. Picking up and putting down the same heavy-as-fuck thing over and over sucks and that's what you're doing if you're cooking any meal that involves some foresight. Again, I'd rather use something lighter but with just as good performance any day of the week.

You know, there's more than one kind of stove-top cooking.
Copper may have better heat conductivity, but cast iron has better heat retention -- neither is better over-all for cooking...

Also, cast iron is the easiest cookware to maintain by far.... you must be doing something wrong. You just give it a quick wipe and rinse, and you're done.

Easier than Teflon-coated cookware? That doesn't make sense.

BTW, I have never used cast iron cookware, but I want to get into it. How does one 'season' the pans? Spread a little bit of oil on the inside? What type of oil? Doesn't the oil get oxidized/rancid over time? That can't be good for health. And when you cook, you have this residue that is weeks, months, and years old and goes into the food you cook.

Am I missing something?

I have three cast iron pans and they all work fine on my glass-top range. Better than aluminum since none of the iron pans have ever warped so they don't sit level on the surface.

Ive always heard you couldnt use cast iron on glass top stoves. It doesnt scratch the glass at all? No worries about dropping a heavy cast iron pan on the cook service?

teflon coated cookware is the devil

anything harder than a boiled marshmallow will fucking scratch and chip it. go with cast iron. especially if you think cancer is a bad idea
