i use the one on the back of the kidney bean can as a base at least..i normally add more veggies and cayenne pepper...and it always turns out damn good (imo)

2 medium onions, chopped fine1 medium green bell pepper, cored, seeded, and cut into 1/2 inch strips6 medium garlic cloves, minced1/4 cup chopped jalapenos 2 t paprika3 T ground cumin2 t ground coriander3 t dried cayenne3 t dried oregano1/2 t cocoa powder1 lbs. ground beef1 tube country sausage1 can dark red kidney beans, drained and rinsed1 can black beans, drained and rinsed1 can diced tomatoes1 can tomato pureeSaltPepperHeat a large stock pot over medium. Add ground beef and country sausage. Cook, breaking up chunks, until no longer pink. Drain excess oil.Add onions, pepper, garlic, cocoa and spices and cook, stirring occasionally, until the veggies are soft and beginning to brown.Add the beans, tomatoes, puree, and 1/2 t salt. Bring to a boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour.Remove the cover and continue to simmer 1 hour longer (if the chili looks too thick, add a bit of water).Adjust the seasonings with additional salt to taste.[Edited on March 22, 2009 at 6:14 AM.
