soup selection that is completely awesome in the cafeteria in my building for the day of wednesday 07 may 2008:

Red Rock Seafood Bisque:
Sherry, shrimp, lobster, scallops, cod, crab, sole, carrots, tomatoes, celery, cream, wheat flour, garlic powder, onion powder, butter and paprika.

Soup is good for you? So an oil and water broth brimming with salt and unsaturated fat is good? Albeit a lot of soups have boiled chicken and vegtables, but I always feel fat after soup due to all the fat and oil.

Maybe you eat stupid soups. If you make your own all it is is water, vegetables, herbs and sometimes chicken.

^ its the chicken that does it. Since you leave it on, any fat on there is eaten. Also, most soups call for broth or bullion cubes. And lots of salt. Otherwise if all you have is chicken, water and veg, you get boiled chicken and broccoli which tastes like ass.

so put the soup or stock that you are making it with in the fridge, wait until it chills, skim off layer of fat, profit

Maybe you should try making a delicious roasted tomato soup, or a nice cold pineapple/cucumber soup.

The whole reason I make soup is because its quick, easy and can reheat well. Both of those sound like they would take a lot more work than would be worth it, honestly. Doing that to the broth might get you most of the fat, if it rises quickly enough. But you still get ridiculous amounts of salt in there. I would think you'd just be better off with a sammich or something simple.

to make a roasted tomato soup all you do is season vegetables, add a little oil, roast, and stick it in a blender.

as for the other, you put the ingredients in a blender and chill it.

man. sounds hard.

unless you are baking something, you don't have to follow recipes exactly, just don't put so much salt in

as for the effort part, just do it on a sunday and have soup for the rest of the week. Most soups really don't take all that much to make. Or freeze it and eat it later. I mean you can buy cooked chicken, buy some chicken stock, veggies, etc and viola! insta semihomeade lazy soup. You can control what you put in it.

or just keep buying soup and complaining.

Had a 'she crab' soup at Foothills Brewery in Winston last weekend; shit was off the hook.....not sure what's special about the females but they were delicious

I suggest using San Marzano tomatoes as well as roma tomatoes.

6 cloves garlic, peeled
2 small yellow onions, sliced
Vine cherry tomatoes for garnish, optional
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 quart chicken stock
2 bay leaves
4 tablespoons butter
1/2 cup chopped fresh basil leaves, optional
3/4 cup heavy cream, optional

Preheat oven to 450 degrees F.

Wash, core and cut the tomatoes into halves. Spread the tomatoes, garlic cloves and onions onto a baking tray. If using vine cherry tomatoes for garnish, add them as well, leaving them whole and on the vine. Drizzle with 1/2 cup of olive oil and season with salt and pepper. Roast for 20 to 30 minutes, or until caramelized.

Remove roasted tomatoes, garlic and onion from the oven and transfer to a large stock pot (set aside the roasted vine tomatoes for later). Add 3/4 of the chicken stock, bay leaves, and butter. Bring to a boil, reduce heat and simmer for 15 to 20 minutes or until liquid has reduced by a third.

Wash and dry basil leaves, if using, and add to the pot. Use an immersion blender to puree the soup until smooth. Return soup to low heat, add cream and adjust consistency with remaining chicken stock, if necessary. Season to taste with salt and freshly ground black pepper. Garnish in bowl with 3 or 4 roasted vine cherry tomatoes and a splash of heavy cream."

soup: throw everything in crock pot and add water. Come back later that day, done. You can put exactly what you want in your own soup, if you want to buy the broth and dilute it, or make your own (hah, no). I dont buy soup unless I run straight out of time. I make a stove top and that lasts for a week. Im not going to comment on the roasted tomato or that other one. Neither sound that quick (roasting) or even that good. Overall I guess soup is ok. But not that great coupled with taste factor and compared with cost/benefits of all other foods. Unless you are doing creme/seafood soup. Then all bets are off.

yes, I am lazy, actually. but more so that im not going to spend very long in anything that isnt fun, entertaining, good for me (cooking is not, exercise is) or makes money.

2 english cucumbers coarsely chopped
1 small or 1/2 large fresh pineapple, peeled, cored and coarsely chopped
6 large fresh basil leaves
6 large fresh mint leaves

In a blender or food processor, combine chopped cucumber, chopped pineapple, large basil and mint leaves. Blend until fairly smooth. Chill thoroughly before serving. Serve soup garnished with small mint and basil leaves.


god damn that is sooooo complicated.

i also suggest adding a little fresh jalapeƱo for a slight kick.
