do you cook it and eat it like noodles, as a substitute for spaghetti?if so, is it as easy as it sounds to cook it and "peel it"?

Yup. I just forked it and put in the microwave for 12 minutes, let it cool, remove the seeds, and then fork/shred it out. I love it with a quasi-Alfredo sauce.

^awesome, that sounds easy enough. what an interesting way to do low-carb. i gotta try it i was told you boil it, and when it's cooked you can just peel out the flesh inside and it ends up just like spaghetti noodles.[Edited on February 18, 2008 at 6:27 PM. Reason : .]

Microwaving is the easiest and probably the least expensive way to cook it if you factor in energy costs.I usually cut it in half, remove the seeds. Place the halves face down in a large pyrex casserole dish in about a 1/4" of water. Cover with microwave safe plastic wrap and microwave on high between 12-15 minutes depending on the size of the squash. This is only a more attractive method than cooking whole because as soon as it is cooked you can shred the squash with a fork and not wait until it is cool to the touch.I like it with marinara and parmesan personally.[Edited on February 18, 2008 at 6:37 PM. ^^ooooh i've seen those in the gourd section...i don't think i've ever had one. i'm always semi confused by the squash/gourd section. so many things i do not know how to cook. i've only really eaten regular yellow squash (summer squash??) eggplant and zucchini. and pumpkin. i never knew i liked squash because my family is really southern and cooks the yellow squashes in a really southern way---almost to mush (like mashed potatoes or something) and with brown sugar. i was never a fan. once i discovered zucchini i ventured back into the world of yellow squash and figured out its actually good when it isn't cooked gerber-style. do want to try spaghetti squash now!!

I love spaghetti squash! I had it once as a kid and hated it, but I tried it again a year or two again when it was cheap at the store, and it's really good. I usually bake mine (cut in half, place in a pan with a tiny bit of water, bake for ~1 hour, then shred), but I might have to try the microwave method.

i always bake it too (~45 min - 1 hr depending on size) and eat it with marinara and parmesan.i'll have to try the microwave though... works for asparagus, why not squash?
