what you need: a brick of cream cheese, a jar of jelly, a plate, a knife and a box of triscuits

put a brick of cream cheese in the middle of a plate

dump a jar of strawberry jelly over the top of it

get a box of triscuits

people spread cream cheese & jelly mixture on triscuits themselves

sounds crazy but holy shit its good

Can't go wrong with the fruits/veggies idea. Add a few kinds of chips and some different dips (cheese, ranch, salsa, sour cream n onion) and you're most of the way there.


OR you could get some ritz crackers and several different kinds of meats and cheeses and make a build your own appetizer bar. Most of the cracker boxes have plenty of examples for use on the front of the box

fresh mozzarella

extra virgin olive oil
balsamic vinegar

^^^^^same idea but with spreadable cream cheese, salsa & chips is also good

^I love caprese!

healthy and a little Stepford-y: open-faced cucumber sandwiches
1 loaf pumpernickel cocktail bread (the little square one)
reduced fat Rondele (garlic & herb or veggie is best, IMO)
1 - 2 large cucumbers, ideally close to the diameter of the bread
fresh dill

peel cucumber either all the way, or leave a few little stripes of skin. slice into 1/8" rounds.
spread a thin layer of cheese on slices of bread, top with cucumber slice, and sprinkle with fresh dill.
best after being refrigerated a few hours.

when I did weight watchers, I calculated the points for these, and I think it worked out to 3 sandwiches = 1 point; but don't quote me on that.

you can also get the frozen chocolate dipped bananas from trader joe's for a laugh

a neighbor of ours fixed a "redneck buffet" on Christmas Eve a while back. He had pigs in blankets made with viennas, cheetos and stuff like that and a spread he made from potted meat, mayonnaise, and pickle relish. it was funny and surprisingly good.

I've been wanting to eat the following dish lately
but I probably won't get to

1 box frozen meatballs
1 pkg little smokies sausages
1 can cranberry sauce
1 bottle chili sauce

throw all of that shit in a crock pot with half a cup of water and let it cook for hours and hours
it holds as long as you want it and only gets better the longer it sits

This hot spinach/artichoke dip is fabulous and all my friends beg me to make it:

1 box frozen spinach, thawed and drained
1 can drained artichoke hearts
1 cup light sour cream
8 ounces cream cheese (i always use fat free, but whatever works)
4 cloves garlic
1 cup shredded mozzarella
1/2 cup parmesean

Dump everything except 1/2 of the mozzarella cheese in a food processor (or chop up the artichokes and then mix it up). Add red pepper flakes, pepper, and hot sauce to taste. Put in a baking dish, top with remaining cheese, and bake at 350 until bubbly. You can serve it with celery and carrot sticks, or toast pita points or baguette slices, or even use triscuits. It's so good!

Another really easy, really yummy dish:

1 wheel of brie
1 jar of apricot preserves, orange marmalade, or any jam or jelly you like (just not grape, it's no good.)
1 tube of crescent rolls

Unroll the crescent rolls into a long sheet. Put the brie in the middle, and top with the preserves. Wrap the crescent sheet around like a package, and bake at 350 until the crescent roll looks done. Serve with triscuits or water crackers.
