During the coming year we will be broadcasting other segments about food featuring both top chefs and home cooks.

We're going to talk about the emerging trends in how food is made, bought, prepared, and served.

According to several different sources around the country, 2008 will be the year of ethical eating.

Vegetarian and locally produced food will grace more tables.

Wines will be more than organic, they'll be biodynamic.

There will be servings of micro-greens you grow yourself, exotic grains, such as amaranth and quinoa, and what are called probiotic dishes, food that helps digestion, or inflammation.

Expect a backlash against bottle water -- flavored tap water will fill our glasses instead.

Bold Korean, African, and Brazilian flavors will be big, but big entrees will be replaced by small plates.

Artificial is out. Junk food will lose its junk ingredients.

Authentic is in. phytonutrients are in. Antioxidants are out.

Goji berries and pomegranates are in. The blood orange is the new superfood.

Salt is the new balsamic vinegar, tea is the new coffee, and caffeine will still be king.

Cupcakes apparently, are, last year. This year, go for the pudding, or better yet, savor a nice piece of dark chocolate candy."

People might not buy as much bottled water, but I really doubt that the flavored tap stuff is going to catch on it a big way.

So if a product is "organic" it implies that the ones that do not have ORGANIC on the packages are inorganic. No food is inorganic.

It's a misnomer for you to buy vegetables at a more expensive price for a crappier quality.

I go to Lowe's foods and look at the avacadoes... the organic ones look like 90 year old wrinkled nuts. The "inorganic" ones are nice a fat and plump. I love pesticides.

This really should be titled "Food Trends for 2008 that NPR wishes would happen"

Or maybe just Food Trends for 2008 for NPR listeners.

Cause some of this shit is waayyyyyyyyyyyyyyyyyy too hippy to catch on mainstream. Especially all in one year.

I can agree with Ian, Splenda tastes like artifical ass. I dislike that and Nutrasweet intensely, and even in a blind taste test (sweet tea at my grandmas) I can tell the difference. Even "sugar-free" soda that uses Splenda has a completely different taste than plain ass sugar soda.

Does not compute. Goji berries, pomegranates, or blood oranges are all highly revered for their high antioxidant content. If anything, it's the antioxidants that make people willing to pay the prices they command over more common fruits.

I think its more about finding foods with naturally ocurring antioxidants, rather than trying to add them artificially

There has been some debate on this statement in this forum. I must say that I beleive it is MOSTLY on track. Authentic is in, just ask Huckabee! LOL, he says he is authentic, and that authenticity is what the public wants, but won't tell you what it means to be so. Politics aside...

There has been a myth promoted by various health groups stating that antioxidants are great for you and work miracles. It is true, anti-oxidants do great things for preventing illness and nutralizing free-radicals, but what isn't common knowlege is that the most powerful antioxidants are made by your own body. The ones that you can consume from external sources help some, sure, but don't compare with your natural antioxidants produced inside you as far as protective properties.

Instead of "phytonutrients", they should have said "polysacharides" are in, because it's the four unique polysacharides found in certain goji berries (not all) that help every cell in your body communicate with each other better and function more smoothly. They even help cells repair damaged DNA so that they replicate like a youngster again. That is why goji juice that is standardized for polysacharide potency is known as the " most powerful anti-aging food on the planet". It also has the added benefit of stimulating your body's own production of antioxidants, intensifying the effect.

You don't have to take my word for it. You can find 91 independent studies on "lycium barbarum", or the scientific name for goji, on the National Medical Library site:

I haven't looked up the blood orange yet, but I am pretty sure it doesn't have 91 independent studies pointing out its benefits, or 3000 years of history like goji has in Chinese medicinal history.

Another mistake in the report is saying that "goji berries" are popular, because when goji is dried or pasteurized the heat destroys all of the bioactive polysacharides or the active ingredients. So you could eat lbs of goji berries everyday and it might give you a good bit of fiber and other stuff, but nothing sensational. Same thing with the juices out there if they are not standardized for polysacharide content, which there is only one that does carry a spectral signature certifying potency. It is the "authentic" goji juice product that was first to bring goji to the forefront of the functional beverage market, and to the western world 4 years ago.
